Introduction: How to Make Burnt Garlic Vegetable Fried Rice : 7 Steps (with Pictures)

My favorite fried rice is burnt garlic vegetable fried rice. Wow its taste is ultimate. Its easy to cook and too good to taste. I did not go overboard with the sauces, it is just simple and yet tasteful recipe with all available ingredients at home.

Step 1: Ingredients

  • Long grain rice : 1 cup
  • Garlic: 5 cloves
  • Green chilli chopped: 1 tsp
  • Cabbage finely chopped: 1/4 cup
  • Potato finely chopped: 1/4 cup
  • French beans finely chopped: 1/4 cup
  • Carrot finely chopped: 1/4 cup
  • Green peas: 1/4 cup
  • Salt: as required
  • Water: 4 cups

Spices:

  • Cloves: 4
  • Green cardamom: 2
  • Black cardamom: 1
  • Star anise: 1
  • Mace: 1

Step 2:

Wash and rinse long grain rice. Add 4 cups of water to a pan and add all the whole spices and add salt required for rice approx. 1 tsp and let it boil.

Step 3:

Once the water is boiled add washed rice and cook. Do not cook rice completely, cook until 3/4th and drain the rice once cooked.

Step 4:

In a pan add 2 tbsp oil, add sliced garlic and saute them until golden brown, add chopped green chilli and fry. Add chopped vegetables one by one and cook them.

Step 5:

Add salt and pepper and mix everything.

Step 6:

Add drained rice and mix. Close with a lid and cook for 5 min.
