Introduction: How to Make Cowboy Cookies
In this instructable, I will show you how to make the best cookie out there- the cowboy cookie.
Step 1: Ingredients
For this recipe, you will need:
3 c old fashioned oats
3 c all-purpose flour
2 c semi-sweet chocolate chips
1 1/2 c light brown sugar
1 1/2 c sugar
1 tbsp vanilla extract
1/2 c white chocolate chips
1 1/2 c pecan pieces
1/2 tsp salt
3 eggs, room temperature
1 tbsp baking soda
1 tbsp baking powder
3 sticks of unsalted butter
Step 2: Grab That Large Bowl
In a large bowl, combine the flour, baking powder, baking soda and salt.
Step 3: Now Grab the Mixer
Melt the butter in the microwave and using an electric mixer, cream it together with both of the sugars.
Step 4: Still With the Mixer
Add the eggs one at a time.
Step 5: Last Step With the Mixer
Mix in the vanilla extract.
Step 6: Now Back to the Large Bowl
Mix the wet mixture and the dry mixture together, stirring with a spoon- make sure to grab a very sturdy spoon. Stir until just combined, do not over mix this step.
Step 7: Throw Everything Else In
Now add the chocolate chips, white chocolate, pecan pieces and the oats and mix the ingredients together thoroughly.
Step 8: Now Grab the Baking Sheet
Form 2 tbsp of the dough into balls and place on a baking sheet lined with parchment paper.
Step 9: Bake!
Bake in an oven that's been preheated to 350° for 12 minutes, or until golden.
Step 10: Cool Down!
Remove the cookies from the oven and place on a wire rack to cool.
Step 11: Enjoy!

What's the conversion from "sticks" for the butter, please? (Roughly how many grams or ounces.)

both of these answers are correct-stick of butter=113 grams or 1/2 c...sorry was at my 9-5 so couldn't answer sooner.

A "stick of butter" is 1/4 lb. or 1/2 cup.

You will get a much better result with softened, not melted, butter. Just leave it out for an hour at room temperature before you start, or microwave very little at low power until soft. Here's why.

Sorry, it looks like the link was removed by Instructables. In brief, melted butter makes chewy cookies, whereas softened butter makes lighter, fluffier, more cake-like cookies.
As Alton Brown said, "Now there are a lot of recipes that call for this business of creaming the butter and the sugar together until light and fluffy. Why bother? After all the butter would soften by itself, right? Well it would, but only as it started to melt. And of course since butter melts rather quickly once it gets soft, that would mean it would separate, there would be water and fat ... it would be bad. By working cold butter together with the sugar, the tiny sharp sugar crystals actually cut into the butter creating very, very small bubbles, and those bubbles will make it easier for other ingredients to integrate into the batter." Thanks. You can also microwave on defrost for 10-15 seconds too.

Because they have the oats and chips, granola like, and the cowboys take a bag full of them out on the range to munch on.

I'm really not sure....if I had to guess, maybe it's because it's basically throw a bunch of things together kind of cookie? I'm sure someone will have a better guess/answer though.
