Supplies

  • 4-6 Peaches - Use what peaches you can get but I like to use a mix of white and yellow peaches (2 to 3 of each type). You don’t need perfect peaches for this recipe. Just cut out any bad bits.
  • 1 cup (250 ml) sugar (or sweetener of your choice).
  • Lemons to juice to get 1/4 cup (60 ml)
  • 1 cup (250 ml) of hot water
  • 4 cups (1 litre) of natural spirit, moonshine, or vodka

  • A saucepan.
  • A large jar.
  • Label and marker.
  • A Strainer
  • Bottles

Step 1: Chop and Cook

  • Cut out any bad bits from your peaches. The number of peaches you need will vary depending on the size and how many bad bits you discard. Start with 4-6 peaches (2 to 3 of each type).
  • Chop the peaches in small pieces.
  • Put the good pieces into a saucepan and discard the bad bits and pips.
  • Add 1 cup (250 ml) sugar to the saucepan.
  • Juice lemons to get 1/4 cup (60 ml) lemon juice.
  • Add the lemon juice to the saucepan.
  • Add 1 cup (250 ml) of hot water to the saucepan.
  • Bring to a boil and simmer over low heat for about 5 minutes, stirring to make sure it doesn’t burn.
  • Let cool.

Step 2: Mix

  • Poor the cooled mix into a large jar.
  • Rinse out the saucepan with 4 cups (1 litre) of natural spirit, moonshine, or vodka and add to the jar.
  • Put the lid on the jar and mix by shaking.
  • Label and date the jar.

Step 3: Let the Mix Sit

• Let the mix sit for 1-2 weeks shaking the jar each day.

Step 4: Strain the Mix.

• Strain the mix. The stained peaches can be used in a pudding or eaten warm with ice-cream as a desert.

Step 5: Place the Schnapps Into the Fridge

• Place the schnapps into the fridge for around 48 hours. The settlement will fall to the bottom of the container.

Step 6: Bottle

• Carefully poor the top liquid off into a bottle leaving behind the settlement.

Step 7: Enjoy

• Enjoy on ice or in a cocktail like a Malibu Summer Rose, Sex on the beach, Southern Whiskey Rebellion, Peach Cobbler, Accidental Tourist, Old Sweet Song, or Philadelphia Fish House Punch.
