Introduction: How to Make Semiya Dosai

Semiya, popularly known in some places as Vermicelli can be cooked in many different ways to make tastier dishes. Here I have used Wheat Semiya soaked in Curd (Yogurt) and mixed with other ingredients to make Dosai.

Making of batter and preparation of Semiya Dosai takes very less time. This can be served as morning breakfast or as an evening snack with Chutney

Step 1: Ingredients

  • About 100 grams of Wheat Semiya
  • One cup of Curd (Yogurt)
  • One onion
  • One teaspoon of red chilli powder
  • Salt to taste
  • Handful of Curry leaves
  • Handful of Coriander leaves
  • 2 to 3 teaspoons of Rice Flour for binding (you can use corn flour also)
  • Oil for shallow frying

Step 2: Soak Semiya in Curd

  • Place the Semiya in a frying pan over low flame and dry-roast to a crunchy texture
  • Remove from stove and allow the roasted Semiya to cool
  • Once it is cooled, add the semiya to the curd
  • Mix well and allow it to soak in curd till you prepare other ingredients

Step 3: Stir-fry Onion

  • Chop the onion into small pieces
  • Place a frying pan over medium flame and add one teaspoon of oil
  • Add the chopped onion to the frying pan and stir-fry till golden brown

Step 4: Make Batter Step-1

  • Once the Semiya is soaked in curd, add Red chilli powder and salt to the pan
  • Add Rice flour and mix well
  • Chop curry leaves and coriander leaves finely and add to the batter in the pan and mix

Step 5: Make Batter Step-2

  • The batter needs to be in a somewhat semi-liquid state for pouring and spreading on the Dosai pan
  • Add one cup of water to the batter and mix well. You can adjust the water to make it to the required consistency
  • Now add the fried onion pieces to the batter and mix with a ladle

Step 6: Spread Batter on Dosai Pan

  • Place a Dosai making pan over low to medium flame and allow to be heated for a minute or so.
  • Take a ladle-full of batter and pour at the center of the heated pan
  • Immediately spread the batter to a round shape with the ladle. If you find the batter is thick, add little water
  • Add few drops of oil on sides and allow to cook over low to medium flame

Remember, you have to keep the flame low to medium, otherwise the Dosai will get burned and stick to the pan

Step 7: Flip Over Dosai

  • With a flat Dosai flipper, lift the edges all around
  • Once you feel that the bottom side is cooked fully, flip the Dosai on the pan quickly
  • Add few drops of oil to sides if required
  • Flip over the Dosai few times on the pan to see both sides are cooked to a dark golden brown

Step 8: Serve Hot With Chutney

  • Once both sides of the Dosai is cooked properly, remove from pan
  • Serve hot with Tomato or Coconut Chutney.

This easy-to-make Semiya Dosai tastes real good. You can serve it as morning breakfast or as an evening snack with coffee / tea
