Introduction: How to Make St. Patrick's Day Pot of Gold Cookies

If you’re looking for a fun and fairly easy project to celebrate St. Patrick's day, these cookies double as good luck charms and sweet treats.

Step 1: Things You'll Need

  • Sugar Cookie Recipe here
  • Royal Icing Recipe
  • Pot of Gold Cookie Cutter
  • Piping Tips (#2, #10)
  • Couplers & Piping Bags
  • Food Gel Colourings
  • 2 Tbs Fondant (Gumpaste an option)
  • Fondant Rolling Pin
  • Small Square Cutters (a paring knife works fine too)
  • Parchment Paper, Toothpicks & Tweezers
  • Clear Extract (i.e. orange or lemon)
  • Gold Luster Dust & Paintbrush

*Please note that rainbow cookies pair well with the Pot of Gold cookies. They are simpler to make. (Cut out a rainbow shape from your dough, bake, and decorate with the colors of the rainbow).

Step 2: Flooding Cookies

Once cookies are baked and have cooled, flood cookies with royal icing and let dry. (Please see the tutorial section of Sweetopia.net if you need a how-to on flooding).

Step 3: Preparing the Fondant

Massage yellow gel coloring into your fondant. Depending on how many cookies you use, you will need more or less fondant. For 3 pot-of-gold cookies, about 2 Tablespoons of fondant worked well.

Step 4: Making Fondant Coins

Punch out 'gold coins' with a #10 piping tip.

Step 5: Adhering Coins to Cookies

Using tweezers, adhere 'gold coins' to cookie with royal icing. Let dry overnight.

Step 6: Preparing Luster Dust

Mix one part gold luster dust to three parts clear extract. (The spoon pictured above is actually a whimsical 'pinch' spoon).

Step 7: Paint Coins

Paint luster dust onto coins.

Step 8: Finishing Touches

Roll and cut out a piece of black fondant for the lip of the pot of gold, and attach with royal icing. Serve on their own or with more St. Patty's Day cookies and enjoy!
