Introduction: How to Pipe a Buttercream Flower Bouquet Cake - With Roses, Parrot Tulips, Carnations & Hypericum Berries

About: I make wedding cakes, cookies and treats and have a bunch of tutorials for them up around the place. My YouTube channel is probably a good place to start if you want to check some out, it's the same handle as …

Fancy making an edible bouquet to top your beautiful cake? You've come to the right place, because I'm going to show you how to do just that! With a cake to decorate, buttercream, some gel colours, 3 nozzles and a few disposable piping bags you too can make your own edible garden - it does take practice, but the video shows it's easier than you might think!

I pipe each flower and leaf from scratch in front of the camera, to make sure you can see how it's all done. Here you go :)

If you're the impatient type, hop straight to the video above - otherwise, read on!

Step 1: Tools & Preparation

To ice a cake as shown, you will need:

your beautifully iced cake!

about 3 cups of buttercream - I used Swiss Meringue but you can use whatever you like

bowls & spoons to divide & colour the buttercream,

6 disposable piping bags

scissors to make the DIY leaf tip, as seen here

gel colours of choice - I recommend some greens, yellows, pinks and reds - the exact ones I used are in the video description box here, or take a look at the pic above

piping nozzles - you'll need at least one petal tip (wilton 104 or similar), and 3 couplers (unless you have enough tips for each colour, then just use a petal tip in each). The rest you can make by trimming your piping bags. The exact ones I used can be seen in the pic above, or the vid description box.

a flower nail

some baking paper cut into small squares

optional - a spatula or scraper to get everything out of the bowl

optional - clips to seal the bags

optional - lazy susan or turntable to put your cake on (it really helps)

Prepare your piping bags:

take a little of your buttercream, and put it in one of the bowls. gently mix in a small amount of gel colour until you get the shade you like. The colours I used are shown in the pic.

fit the nozzles to your piping bag and trip the tip to expose them (or make your DIY tips). Spoon in the buttercream into a disposable bag fitted with the appropriate nozzle - petal tips (or an empty coupler if you only have one petal tip) for the flower colours, leaf ones for the greens. Clip to seal, or just twist tightly.

Top tip: start with the lighter colours, and you can use the same bowl to mix all colours because the darker ones won't be affected. Less washing up, yay!

Now you should have 6 beautifully coloured piping bags full of yumminess.

you're all set! on to step 2!

Step 2: Watch the Video!

Check the vid out! In case you haven't clicked yet, here's the link: https://www.youtube.com/watch?v=cjG_dCi6fPs

You'll learn how to make the following things:

"miss piggy" roses

rose leaves

white hypericum berries

green parrot tulips

various ridged leaves (you'll also want to see my buttercream leaf video here: buttercream leaves)

red/ pink carnations

All but the roses are piped directly on to the cake. And now you know how to make them all! Just start with the large things, then fill up the rest of the space. Pretty cake! Yay!

on to step 3!

Step 3: Admire Your Work... Then Enjoy!

Pipe away, have fun, and when you're done cut yourself a slice & enjoy :)

The sky's the limit with this kind of thing, just choose a picture of a bouquet you like, copy the colours and the style, and you can have a different cake every time with the same basic method.
