Introduction: How to Replace the Blades in a Nemco Easy Vegetable Chopper

If you work in a fast paced or high volume kitchen (or you just don't like to cut vegetables with a knife!) you know the importance of having a sharp vegetable chopper. When the blades become dull, however, you don't necessarily have to replace the entire unit, or even the entire blade assembly! In most models of vegetable chopper, you can order a new set of blades and replace them yourself. In this lesson, we walk you through the process using a Nemco Easy Chopper II.

Step 1: Remove Pusher Block and Blade Assembly

Remove the pusher block by pulling it up and off the vertical guide rods. The two rubber bushings slide off as well, and then you can remove the blade assembly.

Be careful! The top of the blades can still be very sharp!

Step 2: Remove the Old Blades

If you turn the blade assembly over, you'll notice 2 bolts holding the back cover in place. Remove those, and the cover should come right off.

Next, flip the blade assembly back over, and remove the old blades. There are 4 metal guide bars, one on each side of the blade assembly - save those! The blades can be safely discarded.

Step 3: Organize Blade Guides

Put the blade assembly upside down on a table, and re-insert the blade guide bars. The slits cut into the bars should face the inside of the blade assembly.

Step 4: Insert New Blades

Get out your new blades: and be careful! These will be very sharp. You'll notice that there are 2 types of blades: those with the slots coming through the back (non-cutting) edge of the blade, and those with the slots coming through the blade itself. You'll want to start with the blades with the slots in the back, and starting at one end of the assembly, insert them one by one with the blade down.

Step 5: Insert Cross-Blades

Now, take the remaining blades (with the slots through the cutting blade itself) and insert them across the blades already in place. This may be a little more difficult, but just gently tap the back of each blade until it falls into place.

Step 6: Replace the Blade Assembly

Once all the blades are in place, replace the back cover on the blade assembly. Once that is securely back in place, flip it over (remember: the new blades are facing up and will be very sharp!) and replace it back onto the base of the chopper. Slide the rubber bushings onto the posts, and then replace the chopper block on top!

Hooray! Now you're ready to chop with your new, sharp blades!
