Introduction: Indian Saffron Mousse
Saffron is the worlds most coveted spice, and for good reason. It adds intense and unrivaled flavor to any dish.
When you need a simple, yet sophisticated dessert, follow this recipe for a lush and satisfying Indian treat!
Step 1: The Set Up
Ingredients:
-2 cups whipping cream
-4 tablespoon powdered sugar
-1 tablespoon saffron
-1 tablespoon hot milk
- ½ tablespoon cardamom powder
Tools:
-measuring cup / spoons
-metal mixing bowl
-hand mixer
-pan
-mortar and pestle
Step 2: Hot & Cold
First, toss a metal mixing bowl into the freezer, and chill your serving cups in the refrigerator.
Next, heat up a small pan for a minute or two, then when the pan is hot, turn the stove off. Heat the saffron in the pan for 30 - 45 seconds.
Step 3: Crush & Steep
Quickly remove the saffron from the pan and grind in a mortar and pestle. Place in a small cup. Microwave the milk for 10 seconds, and add it to the saffron. Set the cup aside.
Step 4: Mix It Up
Mix the cream in a chilled bowl with a hand mixer until it gets nice and thick... this may take a while. The cream should stick to the beater. Add the rest of the ingredients, and beat for another minute.
Step 5: Enjoy!
Serve it up in the chilled cups, and garnish with Star Anise. (Ground or whole)
Enjoy!

I made this just tonight and it was very good. I think in my next batch, I might add a bit more powdered sugar, but the saffron and the star anise really made for a nice combination of flavors. I will absolutely make this again.

I don't have any cardamom or saffron to hand at the moment - do you think this is worth trying with MTR Badam Feast instead of those? (it contains those and has some sugar in it as well as bits of almond)
