Introduction: Jam Tarts

Supplies:

Puff Pastry

Apricot Jam, or any filling like Cherry Jam or Caramel

Coconut

Eggs

Castor Sugar or Icing Sugar

Vanilla Essence

Melted Butter

extra cake flour to sprinkle on table top

Utensils

Deep Muffin pan

Pastry Brush

Water Glass, Cup or Round Pastry Cutter

Egg Beater or Fork

teaspoons

dessert Spoon

Castor Sugar or Icing Sugar

Vanilla Essence

Melted Butter

Deep Muffin pan

Pastry Brush

Egg Beater or Fork teaspoons

Dessert Spoon

Step 1: Preparing Muffin Pan and Starting Jam Tarts

Brush muffin pan with melted butter.

Sprinkle cake flour over table top.

Lay pastry over cake flour surface. (Do not roll out pastry)

With Glass or Round Pastry Cutter cut circles to fit over muffin pan rounds.

leave aside the extra pastry shapes

Place Pastry in Muffin Pan.

Fill each pastry round with Apricot Jam or with filling of choice.

Leave one side to prepare Coconut Filling.

Step 2: Coconut Filling and Baking

Place eggs, vanilla essence and castor sugar or icing sugar.

With egg beater or fork beat the egg mix until thick and creamy.

Add coconut to the mixture.

Mix thoroughly.

Place dessertspoon full of coconut filling on top of the jam filling.

Bake in preheated oven for 20 minutes.

If coconut tops are preferred brown, leave a little longer in oven.

Step 3: Optional Baking Extra Pastry Shapes

Place extra pastry shapes on baking sheet.

brush with beaten egg.

Sprinkle castor sugar over pastry shapes

one can add cinnamon or any other spice with castor sugar

before sprinkling over pastry shapes.

bake pastry shapes for 15 min or until brown.

this is a delicious extra treat.
