Lean Roasted Sesame Edamame Recipe:
(12 ounce) package frozen shelled edamame
1 tbsp. sesame oil
2 tbsps. sesame seeds
Salt and pepper to taste
Recipe Directions: Preheat the oven to 400 degrees. Place the edamame into a colander and rinse underĀ warm water to thaw. Drain. Spread edamame onto baking dish. Drizzle with sesame seed oil. Sprinkle sesame seeds over the top and season with salt and pepper. Toss until combined. Bake in the oven until golden, about 15 minutes.

This hurts. I love edamame and this sounds delicious, but I'm allergic to sesame oil. What oil would be the very best substitute?

Peanut oil will hold up well to the heat. If you're allergic to nuts then plain canola oil will work well too! The thing about oil is they have different "smoke" points (they don't all hold up the same way under high heat). The trick is to mix a low smoke oil with a high smoke tolerant oil to avoid a burnt taste, you only need to do this trick if you have to. You could very well use clarified butter with a bit of peanut/canola oil and it would still work fine!
