Introduction: Making Amazing Fudge
Great fudge is easy to make if you know how. This instructable will give you step - by - step directions for making fudge so good your friends will beg for the recipe.
But you won't give it to them. : P
Step 1: Ingredients
3 cups sugar
1 bag semi-sweet Chocolate Chips
3/4 cups (1 1/2 sticks) butter or margarine
1 small can (5 oz.) evaporated milk (about 2/3 cup)
1 jar (7 oz.) Jet-Puffed Marshmallow Creme
2 tsp. Vanilla
2 cups pecans, chopped (optional)
Step 2: Step 1
Combine 1 1/2 sticks of butter with 3 cups of sugar in a heavy saucepan.
Step 3: Step 2
Add 2/3 Evaporated Milk to butter-sugar and stir.
Step 4: Step 3
Stir on Medium to High heat until it reaches 234 degrees F with a candy thermometer.
Step 5: Step 4
Add chocolate chips. : D Still on burner.
Things move very fast from this point forward. Have your chocolate chips ready to pour, your marshmallow creme open, and your vanilla and teaspooner ready.
Step 6: Step 5
Remove from heat. Add 2 tsp. vanilla. Add marshmallow creme. STIR REALLY FAST, and DON'T STOP! Use wooden spoon (also good for beating small children), no electric appliances allowed, it ruins the taste. Beat until smooth. Really smooth. Like Lou Rawls' voice.
Step 7: Adding Pecans
If you add nuts, now is the time. Blanch in oven at 350 for 5 minutes, then remove and add to fudge mixture.
Step 8: Step 6
Pour fudge (with or without pecans) into buttered pan. Smooth over with spatula if desired. Sprinkle pecans on top (optional).
Step 9: Step 7: Finito!
Let cool after pouring, but do not refrigerate until it has completely set up.
Step 10: Step 8
ENJOY! : D

To bad I cant make this (i would... but we dont have chocolate chips, and my mom doesnt want to buy any...).
But there is a great seceret i learned... how to use cake mix for brownies... so i will make brownies.
for each container (1 Lb, 2.2 oz) of cake mix, instead of adding what they tell you to add, add this -
2/3 cup Condesed milk (evaporated works to)
2/3 cup butter (melted)
Cook at 350 for 20 minutes, then for 5 minute intervals until done.

I make a similar recipe. I like to add a 1/2 cup of peanut butter. I think it cuts the sweetness a little. You can tell by the glossy look of the fudge in the picture that you cooked it just right.

Oh, YEAH! Chocolate and peanut butter all together! You can actually replace all the butter with peanut butter and part of the marshmallow creme, too.

I can't find the marshmallow creme, what can I substitute it?

Melt 7oz of marshmallows.... that should do the trick. Enjoy (;

In my day this recipe was called "Mamie Eisenhower's fudge". I think I just dated myself. ;-)

This is a good recipe but, I know you got it off the back of the marshmallow creme bottle. I looked on the back of mine and found the exact same recipe.

Yes, it's true. Our daughter wanted to share the step-by-step, taking the photos and adding silly comments throughout. It was a fun family project that I highly recommend. Whatever the recipe's origins, you can't argue with its delicious success!

What if I don't have a food thermometer? How do I know when to stop and add in the chips?

Keep a rolling boil for approximately 5 minutes, stirring constantly. That should get you where you want to be temperature-wise. Enjoy!!!
