Introduction: Mandarin Orange Cake

Cake:

  • Nonstick baking spray, for the pan
  • One 18.25-ounce box yellow cake mix
  • 8 tablespoons (1 stick) salted butter, softened
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • One 23.5-ounce jar mandarin oranges, drained and 1/2 cup juice reserved

Topping:

  • 4 ounces cream cheese, softened
  • 1/2 cup confectioners' sugar
  • 1 1/2 cups chilled heavy cream
  • 2 teaspoons vanilla extract
  • One 20-ounce can crushed pineapple, drained

Step 1: Ingredients for Cake

Gather Your Supplies for the Cake. Get butter, eggs, vanilla extract, nonstick spray, mandarin oranges, and cake mix.

Step 2: Pan and Oven Preparation

Grease a 9 X 13 inch Pan and Preheat Your Oven to 350 Degrees

Step 3: Make the Cake Batter

Mix together the cake mix, butter, vanilla extract, eggs, and reserved mandarin orange juice in a stand mixer.

Step 4: Mix Batter

Mix the Batter on Medium-high for 4 Minutes

Step 5: Add Mandarin Oranges

Add in the Drained Mandarin Oranges and Mix for One Minute

Step 6: Baking

Put the Batter in Greased Pan and Cook for 35-40 Minutes

Step 7: Let Cool

Take Out of Oven and Let Sit Until Completely Cooled

Step 8: Whipped Topping Ingredients

Gather Ingredients for Whipped Topping

Step 9: Start on Whipped Topping

Mix Together Powdered Sugar and Cream Cheese

Step 10: Finish Whipped Topping

Mix Together Heavy Whipping Cream and Vanilla Extract, Then Add the Cream Cheese and Powdered Sugar Back In

Step 11: Finish and Serve

Put the Topping on the Cooked Cake, and Add More Mandarin Oranges on Top.
