Introduction: Mini Ornaments - Tomato Hors D'houerves

Cherry Tomatoes stuffed with watermelon, goat cheese, and cilantro.  Drizzled with an Italian dressing made with pear infused vinegar and olive oil.

Step 1: Ingredients

30 or more Cherry Tomatoes
A wedge of seedless watermelon - 1 cup of 1/2 " cubes will be plenty
Package of goat cheese crumbles - plain or a garlic/herb
Fresh cilantro leaves
Good Seasons Italian salad dressing mix
Pear infused vinegar, Alessi or other brand
Olive or canola oil
Salt and pepper

Step 2: Clean Tomatoes

Clean the tomatoes by cutting a bit off the top.  Scoop out the membrane and seeds with a knife.  If you happen to have a melon baller or a baby food spoon (without the plastic coating) they also work perfect for this job.

Step 3: Slice Watermelon

Slice small cubes/rectangles of watermelon.  The watermelon should take up half the empty space in the tomato.

Step 4: Stuff Tomatoes

Insert a wedge of watermelon and a leaf of cilantro into the tomatoes, leaving half of the space for goat cheese crumbles.

Step 5: Add the Goat Cheese

Add enough goat cheese crumbles to fill each tomato.

Step 6: Drizzle With Dressing

Mix the Good Seasons salad dressing using the recipe measurements on the package.  I used zesty flavor here, but the regular has a milder flavor that subtly highlights the flavors of each ingredient.

Substitute the wine vinegar called for on the package with pear infused vinegar, this is what brings out the cool and refreshing flavor of the watermelon.  You can also lighten the dressing a bit by adding water and not so much oil.

Salt and freshly ground pepper to taste.  Serve.

My sister made these for our yearly Christmas gathering.  They are beautiful, light, and delicious little bites.
