Introduction: Mini Pi Pies

This is a super easy mini pie recipe that requires minimal effort and ingredients.


Ingredients:

bag of frozen mixed berries
1 pastry box of Pillsbury pie crust
2-4 tablespoons of sugar (depending on how sweet you want the filling)

Step 1: Making the Filling

First pour about half of the bag of frozen berries into a small pot or saucepan with the heat on low. Allow the berries to simmer down until they form a smooth sauce. Add in the desired amount of sugar and let simmer for a few more minutes. This process takes about 15 minutes. Once the filling is complete, place it into an ice bath so that when we later fill the pastries, it won't melt the butter and will ensure it to be flaky.

Preheat the oven to 450F at this point.

Step 2: Preparing the Pastry

While the berries are simmering, roll out the pastry dough and start cutting out Pi shapes. Be sure to indent the center of each pi pastry so that the filling has more room.

When the filling has cooled to about room temperature, begin to spoon it into the indents in each pastry (saving plain pi shaped pastries to cover the filled ones). Lay an identical match of pi pastry on top of a filled pi pastry and crimp the edges. Finally, take a knife and score a few lines in the center to allow for heat to escape.

Place the filled pastries onto a non stick baking sheet and place in the oven for 6-8 minutes.

Step 3: Putting It All Together
