Introduction: Moelleux

A chocolate moelleux is a typical french dessert. It looks like a chocolate cake, but it is liquid inside. It is served hot. It seems very difficult to make this pastry, but with my recipe it is very easy. So let's get started with the supplies.

Step 1: The Supplies

  • 100 g (3.527 oz) dark chocolate
  • 110 g ( 0.485 cups or 3.88 oz) butter
  • 2 whole eggs
  • 2 egg yolks
  • 100 g (0.498 cups or 3.527 oz) sugar
  • 50 g (0.472 cups or 1.764 oz) flour
  • 4 metal rings of about 7 cm ( 2.75 inch.)

you can serve it with:

  • Red fruit (strawberries, raspberries, blueberries, ...)
  • powdered sugar
  • a scoop of vanilla ice cream

Step 2: Melt the Chocolate

Now that we have weighed all the ingredients, we can start cooking. First of all, melt the butter and the chocolate in a saucepan over a low heat, stir regularly.

Step 3: Mixing the Eggs

While the butter and chocolate are melting, we make the batter. Put the eggs and egg yolks in a large bowl and gif it a quick mix (that way the egg yolks cannot burn through the sugar). Add the sugar and gif it another mix.

Step 4: Adding the Flour

Sieve the flour over the mixture. Then mix the flour well under the batter with a beater.

Step 5: Adding the Chocolate

Meanwhile, the choclate is melted. Pour the choclade and butter mixture into the batter and stir it well together. Put the batter in a piping bag and let it cool in the fridge for a few hours (+/- 1.5 hours).

Step 6: Baking the Moelleux

Preheat the oven to 210°C ( 410°F). Keep the baking tray separate. Rub the inside of the serving rings with some butter and sprinkle with flour. This way, you can easily loosen the pastries later. Place the rings on the baking tray, preferably on a sheet of baking paper or a baking mat. Cut the top of the piping bag. Fill each ring 2/3 full with the chocolate batter. The cake will rise in the oven. Bake the moelleux for 8 to 10 minutes at 210°C ( 410°F). Note that Moelleux needs to be served hot, so put it in the oven 10 minutes before serving it.

Step 7: Finishing Touch

Place the ring on the plate. Cut the sides with a knife and slide the metal ring off. You can serve this pastry with some red fruit, a scoop of vanilla ice cream and some powdered sugar.

Step 8: The Result

The result is wonderful, a nice and crispy moelleux with liquid chocolate on the inside.
