Introduction: Mother's Healthy Curry Dish, 18 Min

Are you looking for easy, quick and healthy food on a budget? Then you have come to the right place!

I grew up in a family of 6, and my mom was always busy around the house or at work, which didn’t leave much time for cooking during the weekdays. This recipe is one of her classics, and my siblings and I have eaten a fair share of this curry dish. However we still love it today, which is why I wanted to share it with you.

It takes around 18 minutes to cook, uses a lot of vegetables - that can be found all year around on the northern hemisphere, and tastes great!

Let’s get started!

Step 1:

First you need to have all of the ingredients and tools at hand. Please notice that this recipe is made for 5 – 6 people, so you might want to divide it all into half or less – or invite some friends over.


- 500 grams of ground beef

- 3 carrots (big)

- 3 leeks

- 3 pieces of garlic

- 1 tbs of olive oil

- 3 tbs of curry powder (the fresher the better)

- 1 liter of plain yoghurt

- Mango chutney

- 500 grams of rice


- A deep frying pan or pot

- A pot

- A kitchen grater

- A knife

- A carving board

- A potato peeler

- 2 stirring ladles

Before you get started ready the rice: Wash them, put them in a pot, pour water on, turn on the stove. The rice need to cook for 10 minutes, and then stay cooler and untouched in the pot with a lid over for another 10 minutes.

They will be ready just in time.

Step 2: Ready the Vegetables

The first step is to wash and peel the carrots, and then grate it on your kitchen grater.

Then it is time to wash and clean your leeks.
*Leeks can be very dirty between the top levees, so cut most of it up and rinse the rest under running water. Otherwise there might be some crunchy dirt in your food, which is not very enjoyable*

Step 3: Fry the Grounded Beef

Pour your olive oil on the frying pan, and wait for it to get warm. Then and add the grounded beef, minced garlic and curry powder. A fresh curry powder and garlic will boost the taste of this dish. Often those can be found in local and foreign stores.

Let the mixture fry on the pan, while you stir it around: The meat is supposed to crumble.

Step 4: Mix It All Together

As you let the ground beef fry for a couple of minutes, it’s time to cut the leeks into small rings. This should only take a minute or so, and when you are ready (and the ground beef has turned into a soft brown colour) it is time to mix in the carrots and leeks with the ground beef.

Let it Cook for about 5 more minutes. The carrots and leeks should be cooked - but still have a tiny bit of crunch to them.

While it is cooking you can check on the rice or set a table.

Step 5: Dinner Is Served

The 5 minutes have passed and dinner is ready!

The dish is served with plain yoghurt and mango chutney, which add a touch of India and makes the dish more exotic and less dry.

This recipe really works for me as it uses vegetables that are always available in my local store. The children in the family love it, and the only fat used is 1 table spoon of olive oil.

If you want to be healthier you can try this recipe with fiber rich brown rice, or buy low fat yoghurt.
