Introduction: Muesli 3 Ways

Mixing your own muesli saves time and money, and it can be served in a variety of ways. Here I show you a simple recipe to make your own muesli, plus three ways to serve it: as cereal, soaked overnight, and in muesli pancakes.

Step 1: Prepare Muesli

Ingredients:

  • 3 cups rolled oats
  • 1/2 cup sliced almonds
  • 1/2 cup sunflower seeds
  • 1/2 cup large coconut flakes (any unsweetened coconut flakes will do)
  • 1 cup raisins

Directions

  1. Preheat the oven to 350 degrees F. Spread the oats, almonds, sunflower seeds, and coconut flakes on large, rimmed baking sheets lined with parchment paper. Bake for ~20 minutes, checking frequently to prevent burning, until everything looks and smell lightly toasted. Remove from the oven and let cool for at least 15 minutes.*
  2. Pour all ingredients into a large jar or canister. Shake the jar until everything looks evenly mixed.
  3. Store at room temperature or in the refrigerator for a quick breakfast or snack.

Note: You can skip the toasting step and simply mix the ingredients together to make raw muesli, and still use it in the following recipes.

Note: In case you have your own recipe for muesli or want to buy it pre-made, the recipes that follow will also work for most recipes and types of muesli that you might find in the store.

Step 2: Option 1 - Cereal

The simplest way to serve muesli is like cereal. Just pour some in a bowl, add some chopped fruit if you'd like, and add milk.

Step 3: Option 2 - Soaked Muesli

Soaking muesli overnight results in a creamy, porridge-like breakfast that is traditionally served cold, though you can microwave for a few minutes it if you'd like.

These are the ingredients for one serving. Scale up if you'd like to make more. Once prepared, you can leave it in the fridge for up to a week and enjoy it any time.

  • 1/2 cup muesli
  • 1/2 cup milk of choice (I used almond milk)
  • 1 teaspoon lemon juice
  • Optional toppings: fruit, yogurt, maple syrup or sweetener of choice

Directions:

  1. Mix all ingredients in a jar.
  2. Seal the jar and leave in the refrigerator overnight.
  3. Remove from the fridge and it is ready to eat.
  4. If you'd like, top with fruit, yogurt, and/or sweetener of choice. As pictured, I layered the soaked muesli with yogurt and maple syrup.

Step 4: Option 3 - Muesli Pancakes

Ingredients:

  • 1 cup muesli
  • 1 1/2 cups milk of choice (I used almond milk)
  • 1/4 cup ground flaxseed
  • 1 cup all-purpose flour
  • 1 Tablespoon baking powder
  • 1 Tablespoon sugar
  • 1 teaspoon cinnamon
  • pinch of salt

Directions:

  1. Mix the muesli, milk, and ground flaxseed together in a bowl.
  2. In a separate bowl mix the flour, baking powder, sugar, cinnamon, and salt.
  3. Add the dry ingredients to the muesli mixture and stir until combined.
  4. Lightly grease a pan with butter or cooking spray and place over medium-high heat. Form pancakes by scooping 1/3 cup batter into the pan. Cook until the surface looks bubbly, then flip and cook the other side.
  5. Serve warm. You can also cool the pancakes in the fridge, then store in freezer bags in the freezer. To reheat frozen pancakes, place them on a parchment paper lined baking sheet, cover in foil, and heat in the oven at 375 degrees F for about 15 minutes, or reheat on a microwave safe plate in the microwave for about 1 1/2 minutes.
