Introduction: My Moms Matzo Cake

My mom and her mom have been making this cake almost every year for Passover and to be honest its part of the reason I like Passover so much. Ingredients: 2 Eggs 3/4 cups of sugar 1 Tbs coco powder 50g milk chocolate 50g bittersweet chocolate 14 Tbs butter (200g) 1/2 cup of port 5 mazos Sprinkles (optional but fun) Other things you will need: Spray bottle Soft spatula A matzo sizes dish (about 2 inches deep) Pot Metal mixing bowl Wooden spoon

Step 1:

Brake chocolate into a bowl Cut up butter into another bowl And mix eggs in a third bowl

Step 2:

Fill pot with about 2 inches of water. Put coco powder, sugar, and eggs in the mixing bowl and put the mixing bowl on top of the pot. Turn the heat to high and mix till its mix evenly. (mix constantly)

Step 3:

Put in small amounts of chocolate while still mixing, do this until all of the chocolate has melted.

Step 4:

Take the bowl of the stove and immediately mix in small amounts of the butter until its melted.

Step 5:

After your done let it cool for a few hours until it is spread like. (You can speed up the process by putting it in the fridge)

Step 6:

Mix a 1/4 cup of port and a 1/2 cup of water in the spray bottle and spray one of the matzos on both sides making sure to cover all of it. Be sure to let it drip for a moment.

Step 7:

Put your first sprayed matzo into your dish and cover in chocolate. Make sure to get all of the edges covered. When you put it down look to see what direction the lines are going, so you can put them all the same way, this makes it easier to cut.

Step 8:

Repeat steps 6 and 7 for all the matzos. Note that you will feel like you don't have enough chocolate but it will work out. If you are on the last one and there really isn't enough then take some of the chocolate that has dripped on the sides.

Step 9:

Add as much sprinkles as you want. I would have put more but I ran out. This is optional.
