Introduction: My Mum's Delicious Rock Cakes
These rock cakes are really nice.
The mix makes about 8-9 of them.
Step 1: Ingredients and Equipment
Ingredients:
225g (8 oz) self raising flour
100g (4 oz) butter
75g (3 oz) caster sugar
100g (4 oz) mixed dried fruit (currents, raisins and sultanas)
1 egg, beaten
10-20 ml (2-4 tsp) fresh milk
Equipment:
mixing bowl (medium or large)
scales
mixing spoon
knife/spoon (to get butter out of tub)
fork
PREHEAT OVEN TO 180C (400F)
Step 2: Step 1
Sift the flour into the bowl.
Step 3: Step 2
Rub butter into flour until mixture resembles fine breadcrumbs.
Step 4: Step 3
Add sugar and fruit
Step 5: Step 4
mix to a very stiff batter with beaten egg and milk.
Step 6: Step 5
Place 8-9 spoonfuls of mixture, in rocky mounds, on a well greased backing tray. (I used flour it's healthier) allow room between each one as they spread slighty.) You can also put sugar on top to make it more sweet!
Step 7: Step 6
Bake at 180C (400F) Mark 6 for 20 minutes.
Step 8: Step 7
Cool on a wire cooling rack or leave on tray to cool.
Step 9: Done!
Now enjoy them with a cup of tea!
