Introduction: NOODLES: Chocolate and Strawberry
"Noodles" made from agar agar and chocolate (or fruit juice)
Step 0: Acquire Ingredients and Equipment
You will need:
White/Milk Chocolate Spaghetti Ingredients
1g agar agar
3/4 cup water
85g chocolate
Fruit Juice Spaghetti Ingredients
2g agar agar
1/3 cup water
½ cup fruit juice
Equipment
stove and saucepan (harder to find in a college dorm than you might think)
syringe (make sure it’s food safe – we got a molecular gastronomy kit that included one)
small diameter PVC tubing (something like 0.17”), the more/longer the better
Step 1: Step 1: Mix Things Together and Heat Them
Put your ingredients together in the pan and heat them while stirring, bringing them almost to a boil. If it’s chocolate, be sure not to let it burn while it is melting.
Step 2: Step 2: Syringe and Tubes!
Take the liquid off the stove and put it on some convenient heat-safe surface. Then draw some into the syringe, until it is approximately halfway full. Pull the end of one of your pieces of PVC tubing over the tip of the syringe and carefully dispense liquid into the tube until it almost reaches the other end (you can leave a few millimeters empty at the end to avoid overflow). As you will have to repeat this several times while waiting for the noodles to solidify, the liquid may cool too much and begin to gel in the pot. In this case, simply reheat to return to its liquid state and resume syringeing.
Step 3: Step 3: Ice Bath and UnSyringeing
Place the filled tube in an ice bath, ideally holding both ends out of the water, and let sit for 2 minutes. Then remove from the bath and re-attach one end to the air-filled syringe to push out the gelled noodle onto a plate or cookie sheet.
Step 4: Step 4: Repeat With More Different Flavors
Like milk chocolate and strawberry daiquiri mix! We found that the strawberry ones were much more brittle than the chocolate, so in the future we may try experimenting with the chemical/liquid ratio.
Step 5: Step 5: Plating
Some of us (including Ratchle) are awesome. They turned these piles of noodley things into beautiful works of art.

You can go to most any pharmacy and ask for a DOSE SYRINGE and get a "legal" one that you cannot attach a needle to but also has a bigger dose end--these come in sizes too. IF they ask you need 'em for your pets or kids meds. Also TRACTOR SUPPLY sells them--and a surprising range of actual syringes and needles--in the ANIMAL HEALTH section. Even in a NO SYRINGE state like NY!!!!!
And--a lot of US States do not have a "No Syringes" policy! IF you can't find them in the drug aisles ask at the counter or the pharmacy.
Dose syringes come in quite a few sizes too---They even come in a super hugie special size for "Tube Feeding" and hold quite a lot--maybe 8 oz or so?
IF you need to make a "custom size" do as they did in "The Olden Days" and find a wooden dowel just slightly smaller than the tube or piece of pipe you want to use. Wrap the business end with a wrap of yarn or cloth and secure. Dampen to get it to seal if needed. This will allow you to push the mix OUT but will not allow the mix to push back into the tube or pipe. Use this as the "plunger" to force out the mixture.

What is Agar agar? and is it available in the UK?

Agar agar is a chemical produced from a type of seaweed that acts as a vegetarian gelatin substitute. You should be able to buy it online from many places including Amazon. This is the kit that we use.

You can get syringes at the grocery store. Don't believe me? They are called "Flavor Injectors" and they are in the sauce/marinade area. They are really reusable too.

Just a thought. Take a much longer piece of tubing coil it up in a shallow pan filled with an ice bath let the free end dangle over the side and you should be able to pretty much continuously extrude
