Introduction: One Minute Muffin
I found this recipe on the Internet after hearing friends talking about fixing a high fiber, yet moist, soft, great tasting muffin for their kids to eat on the way to school. It's a GREAT "Finger Food" to start the day off right!
Step 1: Step 1 Recipe
RECIPE
1 Tablespoon Butter, Margarine, or oil of your choice.*** IF unsalted butter or margarine is used add a pinch of salt
1 Egg or equivalent of Eggbeaters
1/4 C Flaxseed meal
1/2 teaspoon Baking Powder
1 teaspoon Cinnamon or other spices
Sweetner of your choice. I used about 1 Tablespoon of Splenda
EQUIPMENT
Microwave safe container *** A 1 cup glass measuring cup works well
Measuring cups and spoons
Microwave
Step 2: Step 2 Method
Melt Butter, or margarine in the container you'll bake your muffin in.
Add egg, or Eggbeaters, and wisk slightly
Add all the rest of the ingredients
Mix
Step 3: Step 3 Bake (Microwave)
The original recipe I saw said to cover with plastic wrap, but I no longer put plastic in the Microwave so I just leave it uncovered and bake it for ONE MINUTE (times may vary slightly by wattage on different microwaves) do not overbake.
Step 4: Step 4 Remove.....EAT (Variations)
Remove from the microwave. It will pop right out of the glass cup.
Serve with butter, peanut butter, or jam
There are TONS of variations for this recipe on the Internet. Search for One Minute Muffin, or OMM. Another favorite of mine uses chocolate chips!
My DH likes a savory version of this, with no cinnamon or sweetner, but with onion powder, or basil instead. This can be toasted after baking, and slicing, or can be used as a pancake batter of sorts.

I've been eating these for weeks now. The last few days I tried adding
Banana: Tasted like banana bread!
Cocoa: Brownies! (It was a little dry on the inside that time)
Baked Sweet Potato (no Skin): Simply Awesome!
It seems like adding something to make it a little gooey like a banana or sweet potato works best, But I imagine the possibilities are endless. My Wife just got a diagnosed with a gluten allergy so this has been a real life saver for fans of baked goods that can no longer eat flour.
More experiments to come... After my cocoa experiment and adding "gooey things" I find myself wondering "Is a flax doughnut possible?"

OM gosh a flax doughnut......if you do it PLEASE let me know how it turns out! I love doughnuts, but my husband doesn't so doing one or two would be GREAT!
I've experimented with flavors some, but haven't tried "real" things like bananas, or sweet potatoes. Tell me how much of each you added.....I'd love to give them a try.
I make a savory one for DH leaving the cinnamon out but adding onion powder, or other savory seasonings. I also "bake" it in a larger bowl, so it comes out flatter. Once done he lets it cool a little then slices it in two horizontally and toasts it. He likes it with eggs, or for sandwiches.

I've been doing mine in a 5 cup glass measuring cup. It ends up like a small cake. I also use olive oil instead of butter though I sometimes add a pat of butter after cooking. I also don't measure so I think I've been going heavy on the flax which is probably a good thing when using bananas or sweet potatoes. I noticed that I get better results when everything is mixed well, so I put one attachment on the mixer instead of two and mix it up really well. I use that to sort of chop/ mix the banana or sweet potato until I get a nice creamy mixture. I wasn't able to find flax seed meal but rather milled flax seed at my local walmart. I don't know if its the same thing but I feel like something with a finer texture would do better.
I added one medium banana or a small baked sweet potato with the skin peeled off.
For my wife I've been using real sugar (she hates Splenda) and then before the top solidifies I sprinkle on this decorative blue sugar she likes. I've also considered a savory version.. I think Garlic and Rosemary would be nice. I added Garlic the other day and sliced it to use as a bread substitute with some homemade egg salad.
By far my favorite so far was the sweet potato, its very moist and you almost have to eat it with a fork.

I think the flax seed meal sounds like the same stuff I use. I'm going to try both of your ideas, they sound great. Especially the sweet potato will work well with our low carb way of eating.
Let me know when you try the doughnuts....or any other additive for that matter

I'm going to need to get some flaxseed meal so I can try this.
