Intro: One Pot Meals - Stew & Dumplings (Beef & Chicken)
Beef stew & dumplings is one of my family's favorite comfort-food meals. Over the years, I've occasionally substituted chicken for beef, and both one-pot meals are equally delicious. Making both of these beef and chicken stews with dumplings took less than 40 minutes total, from prep time to dinner time.
Stew Ingredient Checklist
2 12-16 oz. frozen vegetables
1 lb. carrots
1 lb. potatoes
1 onion
2 32-oz cartons of broth (I used beef broth and vegetable broth)
2 lbs. beef (cut for stew)
2 lbs. boneless/skinless chicken breast
Seasonings, herbs, spices
Dumpling Ingredient Checklist
2 cups all purpose baking mix
1/2 cup milk
STEP 1: Making 2 Stews - Almost As Easy As One
Making both beef and chicken stew together is a real time-saver and easy to do. I cook both meats in large pots, adding a 1 cup of water to each pot. In 6-8 minutes, all of the meat is cooked thoroughly, I add broth, frozen and fresh veggies, seasonings, herbs, and spices and cook on medium-high for 20 minutes.
STEP 2: Dumplings & Dinner Time!
While the meat and vegetables cook, combine and stir baking mix and milk until a soft dough forms. After the stew has cooked ~20 minutes, drop dumpling mix by large spoonfuls into the pots of stew, cover tightly, and cook until the dumplings are cooked completely.
A delicious, hearty one-pot meal is ready to serve, with plenty of left-overs or enough to make casseroles for the freezer to be enjoyed another day.

This meal works great as a vegetarian option, too, acoens. Just omit meat, use vegetable broth, and add a few more veggies and spices to ramp up the flavor. I've had good luck making it meatless and the dumplings are always delcious!

How did you come up with the beef idea? OMG, I'm used to the usual "chicken and dumplings". Keep up the good work! It sounds, and looks amazing

Thanks for the comments, aalazieax. A try a lot of new combinations when I'm cooking - sometimes it works and sometimes not so much. Every now and again I stumble across a new way of making an old favorite that my family really likes.
