Introduction: Oreo and Peanut Butter Brownie Cakes
So, after being gone all last week, this has been catch up on the house week. Mostly laundry actually. Man, who knew that a weeks worth of laundry from 5 people could be so daunting. Yikes!! But I am kind of behind on my cooking and baking as well since I've been gone and cleaning. Not to mention, I needed an Oreo fix! So here we are. I saw this recipe earlier this week on a blog I kind of stock called Picky Palate. If you don't follow this blog, you should!! It's amazing. Plain and simple! And that is where I found this little concoction. Gorgeous, right!?! I love all the layers. Just makes you wanna take a bite, and really, all you need is a couple ingredients. You just prepare your brownie mix, spread oreos with peanut butter, stack, cover with brownie mix and bake. Easy and so delicious! Enjoy!!
Oreo and Peanut Butter Brownie Cakes
1 box brownie mix, 8x8 inch size
24 Oreo Cookies
1/2 cup creamy peanut butter
Preheat oven to 350 degrees and line a 12 muffin cup baker with paper liners.
Prepare brownie mix according to package directions. For each cupcake cup spread 1 teaspoon of peanut butter over 2 Oreo cookies and stack them on top of each other. Place oreo stacks into the cupcake lined muffin cups. Spoon 2 tablespoons of brownie batter over each stacked oreos and let it run down the sides of the cookies. If you have left over brownie batter, bake separately in a separate baker or muffin tin. Bake cookies and brownies for 18 to 20 minutes, until brownies are cooked through. Let cool completely then serve.

I didn't use paper liners; just sprayed the tin liberally with Pam. Also, I only used 1 Oreo. I was out of creamy PB so I used crunchy. I let them cool in the pan for 5 min and they came out easily. And boy were they delish!

I made these but the Oreos came out of the top of the brownie.. How do I make or so the brownie is the top layer and it is smooth?!

I just made there for my office cookie exchange and they came out great. Couple of changes I made:
- added an extra egg to the brownie mix
- only cooked for 10 mins... tops...
- used aluminum foil cups that were liberally sprayed with PAM for baking
- took them out of the cupcake tins to cool on a rack immediately after removing from the oven
They came out perfect. Did not stick to the foil and were super moist.

My 18 year old grandson thought these were the best dessert EVER! He and his college roommates could not say enough about them. My grandson said, "I can't even put into words how good these are." Hahaha - I thought they were overkill and tasted exactly what they are; oreos, brownies and peanut butter. I like them all separately, but not so much all in one. My husband also liked them. Figures. ;) LOL

not sure for the negative reviews of this recipe. I had NO PROBLEMS at all and they look like the picture. I doubled up on the cupcake cups so they would not stick. WONDERFUL!

I just finished making these with a few minor modifications… I used double stuff oreos and spread the PB on both sides. I also put a little batter in the bottom of each muffin tin. Most importantly, I didn't have ANY of the sticking issues that other users seemed to have struggled with. I experimented first using a foil liner, plain paper liner and no liner at all. No liner wins, hands down. I just sprayed the bottoms and sides of the tins with the PAM that's made for baking. Super delish. I also used 3 eggs in the brownie mix so they're a little softer and more cakey.

I made these today, and I followed the recipe exactly. There were 2 things I did differently that made these wonderful! First what I did was I sprayed pam in the cupcake liners (was very generous), secondly I cooked them for 14 minutes instead of the 18-20 it suggested. I preheated the oven while I put the peanut butter on the oreos. They were nice and soft, didn't stick to anything, and very tasty!

Wow! what can I say. What a disaster of a recipe! If you don't mind wasting a box of Oreo's and a box of brownie mix, by all means please make these. To me, this is one of those recipe that was born in a college dorm room by someone with nothing better to do (think deep fried Twinkies, and you get the idea). First, your brownies will never come out like the one in the picture. Those in the photos were most likely the "Lebensborn" of multiple attempts. Yours will most likely look like asteroids after reentry. Second, they are not easy to make. A nice orange souffle is easier (and better tasting). If you do find the courage from within to attempt these, please heed the warnings of other comments here. But know this, even if you spray your cupcake papers they will still cling tenaciously to your brownies with all the ferocity of a rabid wolverine. Thirdly, quite frankly these just aren't very good. If you really need to get your peanut butter, brownie, and Oreo on, there are much better ways to do it.

As someone who doesn't bake at all, this recipe was great and simple. I used aluminum foil muffin tins instead without cupcake liners. I greased the sides and just had to pry a little to get the brownies out so no cupcake liner problems. Some of the comments mentioned them being sweet, but I thought the peanut butter helped balance out the Oreos. The Oreos do not soften up by themselves but gave a nice bite - just like the oreos in Cookies 'N Cream ice cream. I made some of the cookies soft by dipping them in milk, but it can get messy as you spread the peanut butter. It is easier to either dip one side, spread pb, then dip the other side or spread all the pb before dipping everything in milk. Crunchy peanut butter also works but is a bit harder to spread and creates a larger stack.
Either way, it was a hit! Everyone that ate them thought I was an expert at baking and thought they were delicious.

They stuck in the cupcake liners! What happened?!

So I was wondering if anybody has tried mailing these anywhere? My husband is deployed right now and loves all 3 ingredients! Would love to send him some but I don't want to if they go bad quickly.

I have made these before and they seemed to have kept for about a week. They are definitely best straight out of the oven!
