Introduction: PASSIONFRUIT & PISTACHIO SLICE

I'm sure this recipe for PASSIONFRUIT & PISTACHIO SLICE is one straight from Grandma's handwritten cookbook.

I like to imagine that it is.

It's delicious and no bake!



Supplies

2 x 250-gram packets of plain vanilla biscuits

2/3 cup coarsely chopped pistachio nuts

1 x 395 gram can of sweetened condensed milk

200 grams of melted butter

zest of one lemon

Step 1: Make the Base

Grease and line a 20cm x 30cmslice tin.

Combine all ingredients - plain vanilla biscuits, pistachio nuts, lemon zest, sweetened condensed milk and melted butter.

Press into the slice tin.

Place in fridge while making icing.

Step 2: Make the Icing

Sift 2 cups icing sugar.

Add 50 grams of diced soft butter.

Add 3 Tablespoons of passionfruit pulp or topping.

Mix and add milk to make a spreadable consistency.

Put on the slice and refrigerate until set.

Cut into pieces - small or large - you decide :)
