Introduction: Paleo and Scd Almond Butter Bread

Yields 14 thinly sliced pieces
Cooking time:
35 - 45 minutes
Ingredients:
1 lb (454g) Almond Butter (Creamy)
5 med-large eggs
1 1/2 tbsp. lemon juice
1-2 tbsp. honey
1 tsp baking soda
Directions:
Whisk all ingredients together
Lay parchment paper or grease a loaf pan with butter or thin layer of coconut oil
Pour in batter.
Bake at 350° for 35-45 minutes or until butter knife placed in center comes out clean.
They are great for toasts!

Nice! I've made a few varieties of this (sweet and savory) with great results. Just found out a new tip from a chef friend of mine: whip the egg yolks and egg whites separately, then fold them into the rest of the ingredients. Instant lighter texture! I'm looking forward to trying it out.
