Introduction: Pancake Coated Breakfast Bites

Yes, I know what you are thinking... Pancake coated eggs!? Why yes! You are right. A fried piece of delicious right!

This heavenly concoction of flavors is sure to give your taste buds a whirl and satisfy your breakfast cravings that we are all (lets face it) notoriously hammered with. This breakfast has it ALL. Pancakes, eggs, cheese, sausage, peppers, syrup and what would a breakfast be without our good friend bacon?

Now, what would happen when all these flavors are rolled into one? Why, a breakfast seizure! Not to mention, these are FRIED as well. Hey I didn't say it was good for you.... Lets not think about that right now.

The best part of this Instructable is, you can add whatever flavors you wish! Mushroom? More bacon? ....Anchovies (if that's your thing)? Go for it!

Roll up your sleeves and get a napkin, you may drool. haha, lets get started shall we?

Step 1: Nothin' Hard About These Ingredients

Your good ol' fashion run of the mill ingredients! You can downsize this portion if you like. This was enough to feed about 2-3 people, depending on appetites.

Food

  • 6 large eggs
  • 1lb of sausage (Jimmy Dean)
  • pancake batter
  • Cheddar cheese (shredded)
  • Bacon (cooked)
  • Peppers
  • canola oil (for frying)

Cooking utensils and pans

-Mixing bowls (small to medium)

-spatula

-Pans to cook

-chopping knife

-whisk

-fryer (or large pan to fry in)

-cup and tablespoon

-your hands!

Start this project the NIGHT BEFORE you want to eat them or at least 2 hours before you plan to make them. So, say you want them Sunday morning, be sure and make the first parts Saturday night. This is because we want to fry them; in order to fry them right they must be frozen so they don't fall apart in the fryer.

Step 2: Make Scrambled Eggs

1st step. Let's crack some eggs!

Crack at least 6 eggs in a large mixing bowl. Add whatever you like your ingredients to be for scrambled eggs. If you have a Grandma's recipe, use it! For me, I just use eggs, salt, pepper, and a little milk. Whisk eggs until they are all well incorporated and you no longer see yolks.

Step 3: Chop Up Your Peppers

Next, grab your selection of colored peppers and give them a good chopping session. Make sure to remove any seeds. Be sure and dice them well so you can fit them in your bite size portions. If you want you can even use a food processor, just remember it'll be more to clean. noooo

Add peppers to the scrambled eggs into a large pan and cook, cook, cook! You can cook scrambled eggs by using a spatula and pulling in the sides of the eggs slowly. Continue until you basically make a large omelet. Then, using your spatula, break up the omelet and you have made scrambled eggs. If you are still unsure how to make scrambled eggs, you can use this instructable with more step by step instructions.

Now, pour the eggs into a bowl and toss in some shredded cheddar cheese. You can go spicy and add pepper jack or even something spicier. A good cheese to try is chipotle gouda. It will give such a kick with amazing flavor.

Step 4: Brown the Sausage

Brown the sausage. Drain any fat you don't want. I like to drain all of it. Have I sinned?

Toss the eggs and sausage together in a medium sized mixing bowl.

Step 5: Lets Get Dirty

Mix the eggs and sausage together really well. I like to use my hands... the finest tools ever. Just make sure and wash your hands before you stick them in there! The egg and sausage should naturally stick together and be able to ball up in your hand. I know it may look gross now but it'll be delicious, I promise!

Now wrap the breakfast bites in plastic wrap and aluminum foil. yes, they are going in the freezer.

Freeze for at least 2 hours or overnight. Then, get ready for some yum!

Step 6: After Frozen..

After 2 hours or overnight, they should be good and solid. The above is a picture of what it will look like.

Step 7: Make Pancake Batter

Ouu you're getting so close! Good morning, now you are ready for making pancake batter! Make pancakes for 4 according to directions on the box.

The directions should be something like 1 cup of mix, 1 Tbsp of oil, 1 egg, and 3/4 cup of milk in a mixing bowl. (or you can just use the variety where you only need to add water)

Whisk together until there are no clumps left.

Meanwhile, heat up some oil. We use a whole canola oil bottle.

Step 8: Make Special Syrup Dip

While oil is heating, take this time to make your special syrup.

Simple and yummy! This syrup will be used as a dip; although don't get me wrong, you can still pour it on top.. Simply chop up some cooked bacon and pour it into some syrup. Maple syrup would be a delicious choice.

Step 9: Dip and Fry

Make sure your oil is hot. About 375 degrees. You can test the oil by dusting in some flour or spritzing in some water. It will sizzle! That is how you'll know it's ready.

Take the breakfast bites out of the freezer if you haven't already. Dip the frozen balls in the pancake batter until well coated. Because it is wet pancake batter, you don't need to make a flour, egg, and batter base. They are already made and will coat very well!! Time and dirty-dish saver!

Gently place the balls into the fryer one at a time. They will take about 3-4 minutes to cook all the way through.

Step 10: You're Done!

Pile them high my friends and prepare for a feast! They are perfectly sized to pick up and be dipped in delicious syrup! The perfect snack for a breakfast fanatic! Start slapping some hands if you find them disappearing!
