Introduction: Paneer Kolhapuri Curry

Paneer (Indian Cottage Cheese) is used in many Indian Disches, especially Vegitarians love these Dishes. Paneer Kolhapuri has its origin from Kolhapuri Cuisine. Kolhapuri Masala paste with blend of Spices and Coconut gives nice flavour to the Dish. This curry is popular in North India and is unique from other Paneer Curries we normally prepare.

Supplies

Ingredients:

- One chopped Onion

- Three chopped Tomatoes

- Sliced Paneer Cubes and Grated Paneer

- One tsp Mustard seeds

- One tsp Cumin seeds

- 10 Cashews

- 2 Cardamom, 2 Cloves and 4 Pepper Corns

- Small inch Cinnamom stick

- Bay leaf, Half tsp Fennel seeds and Stone flower(Pathar Phool)

- One tbsp Sesame Seeds

- One tbsp Dessicated Coconut

- Three Garlic Cloves

- One tsp Ginger Garlic Paste

- One tbsp Coriander Seeds

- Salt as per taste

- Red Chilli Powder

- Pinch of Turmeric Powder

- Coriander Leaves

Step 1: Procedure for Making Kolhapuri Masala Paste

- Take little oil in a wide pan.When oil is heated add teaspoon cumin seeds,4 pepper corns, 2 cloves and 2 cardamom,small inch stone flower,cinnamom stick,Half teaspoon fennel seeds, small inch bay leaf and saute for few seconds on low flame.

- Next add one tbsp sesame seeds,one tbsp dessicated coconut,3 garlic cloves .

- When coconut turns light brown add one tbsp coriander seeds and saute for few more minutes

-Transfer the sauted ingredients in to a blender

- Next to the same pan add little oil and roast 10 cashews and one onion.

- Transfer the roasted onion cashews to the ingredients in blender.

- Add red chilli powder,coriander leaves to the same blender and blend all ingredients by adding little water to a paste.

- Kolhapuri masala paste is ready for curry preparation

Step 2: Procedure for Preparing Curry

- Add little oil to a pan . When oil is heated add Teaspoon mustard seeds,Teaspoon cumin seeds and Teaspoon split black gram and saute for few minutes

- Next add teaspoon ginger garlic paste and 3 chopped tomatoes

- When tomatoes turn mushy add pinch of turmeric powder

- Now add previously prepared kolhapuri masala paste and give a mix

- Add paneer cubes and little water to make gravy consistency.

- Add salt as per taste

- Finally garnish with coriander leaves and grated paneer
