Introduction: Peanut Butter Cookies

Since the beginning of my SCD diet I’ve been struggling to find a lovely cookie that was simple, easy, and SCD legal. I had tried lots of different recipes but they turned out to taste more like dog biscuits than cookies to me.
Finally, my aunt brought a super simple cookie to a party and I got the recipe, and now these are the only cookies I ever bake.

Step 1: Ingredients

These cookies are a super simple recipe revealed to me by my aunt.

Literally three ingredients.

1 cup of peanut butter
1 cup of cane or 3/4 cups coconut sugar
1 large egg

The peanut butter can be substituted by any nut butter, and a mixture of nut butters may be used.

Step 2: Baking

Set your oven to 350°

Grease a cookie sheet with coconut oil, butter, or olive oil

Make in rows of however many cookies you want (i is usually make a bunch of little ones)

Pop in the oven for 10-12 minutes

Enjoy!

Note: the cookies will not flatten on their own, so once you take them out of the oven (the bottoms should be turning a crispy light brown) you’ll have to flatten them with a spatula or your clean hands. They also take longer to set and harden, and they’re kind of floppy no matter what you do. So no, they’re not undercooked. It’s just how the cookies are!
