Introduction: Peanut Butter Honey Cookie Pops
I figured it was about time for me to venture into the area of cake pops again. But, like with my Brownie Pops, I didn't want to use cake. I eventually decided on peanut butter cookies and, initially, I was just going to mix the cookie crumbles with peanut butter (which would be fun to try to if you don't like honey) but then my husband suggested honey. And it was a very good suggestion!
Step 1: What You Need
Ingredients:

Peanut Butter Cookies - I used this Instructable
- Honey - about 1 cup
- Chocolate Candy Melts of some type*
Tools:
- Cookie Sticks
- Microwavable Bowl for Chocolates
- 9 by 13 pan or cookie sheet
- Spoon
- Bowl for mixing
- Pan you can stick in the freezer
- Parchment or Wax Paper
- Styrofoam or something to stick the pops in while the chocolate coating is drying.
*This recipe will yield about 30 cookie pops and if you use 12 oz of candy melts, you should have enough with just a bit left over after dipping all of the pops.
Step 2: Bake Cookies
You need to start by baking your cookies. Usually, peanut butter cookies are all fancy with the hatches in the top, but you really don't need to do this.
I used this recipe and instead of making cookies, poured it in a pan and baked it for 20 minutes.
Let the cookies, or cookie bar, cool.
Step 3: Crumble Your Cookie
Time to get the pops ready. Take your cookie bar and mash it up in a bowl. Since it is a cookie, it should get pretty crumbly.
Once it is all mashed up, mix in your honey. I put in just under 1 cup of honey, but you can add more if you would like. Once this is all ready, you can put it in the fridge to cool a bit, if you would like, before making your pops.
Step 4: Assembly
Make sure your hands are nice and clean. (They should be anyway, when you are baking, but you really want to make sure they are clean for this step.)
Take your cookie/honey mix and make little balls. It is going to be messy, but it shouldn't be too sticky. I was able to make 33 balls from one batch of cookies. Put a piece of wax paper on a baking pan and line up the balls. Stick this in the freezer for a bit (an hour or so).
Once you are ready, take out a few of the balls. Now melt down your chocolate by following the directions on the candy melts. I just used the microwave. If it is going to take longer than that, wait to take out the cookie balls from the freezer.
First dip the cookie sticks in the chocolate and stick it in the cookie ball. Mine were pretty hard from being in the freezer, but once they started thawing, they really thawed. Just be careful when you stick in the sticks so you don't break the ball into pieces.
I usually do about 10 balls at a time and get them all on sticks first. Then I coat them in chocolate. My candy melts are really thick so it is hard to dip them. I used my spoon method for these pops. I stick the pop in the chocolate and fill a spoon with chocolate. Then I rotate the pop on the spoon to coat it. You want to do this quick, because the more you twirl it on the spoon, the closer it will be to falling off the stick. It works itself loose.
I pre-stabbed holes in my styrofoam, so once they were coated, I stuck it in the styrofoam and moved onto the next pop. Each time you run out of cookie balls, just grab some more from the freezer.
Step 5: Enjoy
Time to enjoy your cookie pops! I really liked that you would bite into them and your mouth would be filled with the deliciousness of peanut butter and chocolate and then after a few seconds of chewing, BAM, the honey hits you!

Nope... it's not just you. The candy melts are a pita. I add a little coconut oil to the batch when I use them... which isn't often.

Yes. Just a little coconut oil in the melted candy makes it thinner, then solidifies when the shell cools.

Thanks :) I was a bit worried about how they looked especially since they were so frustrating to cover. In the end, I gave up trying to make them look nice and I was just glad they were edible!
