Introduction: Pita Pizza: the Five Minute Snack
When you're up at 2 in the morning and just craving a snack, but don't have the will power to make real food, you need something quick, easy, and delicious. Introducing, the Pita Pizza!
Step 1: Ingredients
Starring
1 Pita
Pizza sauce (from a jar, preferably)
Mozzarella cheese (from the freezer, preferably)
Other toppings
Feat:
Toaster Oven
Small cutting board
Spoon
Pizza knife
Step 2: Turn on the Toaster Oven
I like to bake it at around 250-300 degrees. Any hotter and the cheese will start to burn too early.
Step 3: Lay It Out
The great thing about small cutting boards, is they serve so many purposes. Mine is a preparation plate, a knife resistant surface, and a serving platter, all in one!
Lay Mr. Pita down so that his edges are up (like a bowl...they're sort of curved), and give him a little sun tan lotion, but not too much. Too much sauce can ruin a pizza.
Next, spread the cheese liberally, and add any other toppings you'd like.
Step 4: Peter the Pita Is Baked
Slide your pizza in the sauna to chill, until the cheese is melted to your satisfaction. He'll need about 5-7 minutes to fully melt, depending on the temperature of your oven.
Step 5: Voila!
Take him out, cut and serve. You've just made your first of many pita pizzas.

I live right by a bakery that makes middle-eastern cuisine, as well as have a stock of imported goods. Their pita bread is SUPREME! It's light and fluffy, like a pillow. It is also freshly made, daily! Perfect for pita pizza... I can still remember it.

Your oven temperature, is it Celsius or Fahrenheit?
I assume the latter since your oven seems to go to 450/500 degrees. I have never seen a toaster oven reach that kind of heat in Europe ;-)
(250 - 300 degrees Fahrenheit converts to about 120 - 150 degrees Celsius.)

Could this work in the microwave if you don't have a toaster oven by toasting the pita before you put it in the microwave or will that not produce good results.

I've been making this for years. It does work in the microwave but it's kinda chewy and and puffs up (so don't load it down). My favorite combination is: Ragu sauce 1 serving mozerella (like 1/4 or 1/3 cup) 1 slice swiss cheese onions (or whatever topping you like)

Paul Prudhomme's Pizza and Pasta Magic makes one of these things better than you'd believe. I'd love to see an ible on what's in that stuff.
