Introduction: Pizza "Margherita" and "Funghi"
Pizza "Margherita" or Pizza "Funghi" ? So hard to decide, so I will do both.
Choose your favorite topping and try to make Homemade Pizza!!!
Supplies
Dough (for 1 pizza)
- 100g water, lukewarm
- 10g Fresh yeast
- 1/2 tsp Sugar
- 200g Flour - High-quality flour, all-purpose flour
- 2 tsp Olive oil
- 1/2 tsp Salt
Choose the topping:
Margherita (for 1 pizza)
- 200g Mozzarella
- 100g Tomato sauce
- Basil leaves
- Salt
Funghi (for 1 pizza)
- 250g Mushrooms
- 20g Butter
- 100g Mozzarella
- 100g Tomato sauce
- Thyme leaves
- Salt
Step 1: Activate Yeast
In a large bowl, mix together water, fresh yeast, and sugar. Let stand for 15 minutes.
Step 2: Prepare Dough
Add flour, salt and knead everything. Mix the olive oil in as the last step.
I use a mixer
- for Thermomix set 2 min/"Kneading"
- for KitchenAid set 2 min/Speed 2
Form dough into a ball shape, cover with cling film and let rise for 2 hours (until double in volume)
Step 3: Preheat Oven to 220°C / 420°F for a Sufficient Amount of Time
Step 4: Forming the Pizza Base
Cover the baking tray with baking paper. I will make one square pizza with 2 toppings, so I cut in half the ingredients.
The base must be prepared by hand. With a motion from the center outwards, start to press your fingers of both hands on the dough ball. Work gently to obtain the desired shape. At the edge form a small rim.

Step 5: Margerita
Spread a thin layer of tomato sauce, and mozzarella cubes, and sprinkle with salt. Bake for 20 minutes.
Step 6: Funghi
Fry the mushrooms (with a pinch of salt) in butter until lightly brown. Drain off any excess oil. Spread tomato sauce, mushrooms, mozzarella cubes. Bakefor 20 minutes.
Step 7: Aromatic Herbs
Mix the leaves with olive oil, and sprinkle over the pizza and bake an additional 2-5 minutes.
