Introduction: Pizzelle's Aka Krumkake
I got this Pizzelle iron at a barn sale for a buck....
Cant believe how easy these are...
Light and tasty and you can use almost any flavor you'd like.
You need an open flame so it even works over a campfire but a gas stove is ideal....
Step 1: Making the Batter
- 3 eggs
- 1 3/4 cups flour
- 1 stick butter
- 2 tsp. baking powder
- 3/4 cup sugar
- flavor extract (anise, vanilla, raspberry, banana etc)
You can use any flavoring you like. Next time I'm trying Chambord. Amaretto is nice too but it tends to blow a lot of steam out of the iron if you close it too fast so be careful when using alcohol as it may become a flame thrower........
Step 2: Making the Pizzelle's
Start by heating the iron over the open burner for at least a minute. 30-45 seconds per side is usually good.
Then put a heaping tablespoonful on the center of the iron and close it slowly. it helps to do this over the sink until you get the hang of how much batter to add...
Just keep a knife nearby and scrape the edge of the iron to remove and excess so it wont burn when you put it back over the flame.
Return the iron to the fire for about 5-10 seconds on each side until they are done.
A simple tap on the board will release them from the iron. If you're having trouble try a little cooking spray on the iron...
repeat these steps. if you do it quickly you only need to preheat the iron for 15-20 seconds per side.
Step 3: Finishing Them Off
I like them just dusted with a little powdered confectioners 10X sugar. To be fancy I roll them around a stick. You have to be quick. they will only be soft for about 5-15 seconds after they leave the iron. After that they just crumble up and can't be rolled. Helps to have calloused hands so you can handle the hot cookie.
If you want Krumkake style you can roll them over a pointy dowel like a lemon juicer... Kind of looks like little ice cream cones when you do.
Once rolled fill with Cannoli cream, whipped cream, chocolate pudding, mousse, ice cream, or ????
