Introduction: Plum Pi Pie

This delicious mini Plum Pi pie serves approximately 3.14 people. I made this Spiced plum pie filling in the fall and had just a bit too much pie filling so I stuck in the freezer for future mini pies. Which worked out well because I only had a little bit of the crust mix left. Plus I was in a hurry for Pi Pie! Because I didn’t measure anything I will not be putting measurements for ingredients.

Ingredients

Crust mix( I used Krusteaz),or your favorite crust from scratch.
Plums, quartered

Lemon juice

Sugar

Flour

Pumpkin pie spice

Supplies

Bowl

Spoon

Rolling pin

Knife or pizza cutter

Step 1: Mix Dough for Crust

Preheat oven to 375

Mix your dough- either package mix or homemade
roll dough out evenly

Step 2: Cut Aluminum Foil

Take a flat sheet of aluminum foil and cut a Y shaped slit into it.

Step 3: Shape Aluminum

Start folding the aluminum into the shape of Pi and pressing and form the side walls. You may need a more slits.

Step 4: Reinforce Sides

on any weak points or low sides use small pieces of foil to reinforce and shape.

Step 5: Cut Dough

Cut dough into 3 pieces

Step 6: Press Dough Into Pi Pan

place strips of dough in Pi pan and press in, shape the top of the crust

Step 7: Fill Pie

Fill with the plum filling.

Uncooked

Plums, a squeeze of lemon, about a tablespoon of flour, sugar to taste, pumpkin pie spice to taste. Mix and fill pie.

Step 8: Roll and Cut Left Over Dough

Roll leftover dough, cut into small strips.

Step 9: Decorate

Lay the dough strips In a crisis cross pattern. Butter or oil top of pie. Sprinkle some sugar on.

Step 10: Bake

Bake @ 375 for 30 minutes on a baking pan. Expect some juice to leak out of the aluminum foil Pi pan.

Let cool.

Step 11: Serve and Enjoy

When serving, pull down foil sides until flat so that you can easy cut.
