Intro: Poor Woman's Breakfast

With my kitchen demolished for remodeling I've had to be creative about food. We used to eat this for breakfast in Brasil because it is dirt cheap to make.

Ingredients:
- 2 overripe plantains (they can be pure black and still good inside)
- 2 tablespoons of butter
- 1 tablespoon of granulated sugar (you can use honey too)
-  Cinnamon

Cut the plantains in half. Put them in simmering water for about 10 minutes or until you see the insides oozing out of the peel.

Take them out of the hot water and plate them. With a sharp knife cut them lengthwise. On the cut put some butter, sprinkle the sugar and cinnamon on top. Serve hot.

now, just a question: can I peel the plantain before I boil it?

Can this be done with margarine instead of butter? I'm lactose intolerant, so I try to avoid milk-based products like the plague.
Yes! you can use anything that works well for you.
Yes, just cook it less. Plantains are thick and dense where bananas are soft. Also, don't cut the banana in half. Let me know how it comes out.
Reminds me of my farm days in Brazil... wonderful.
It really is!! the riper the plantain the better it will taste.
looks like you can eat the skin/peel, too?
I think you could if you really wanted to. Plantain skin is very though and stringy, I have never tried. Let me know if you do.
