Introduction: Potato, Cheese and Spring Onion Pie

In this Instructable, I'll show you how to make a potato cheese and spring onion pie. The potatoes are slowly steamed inside the pie, so NO HOLE in the lid, it is very important.

Step 1: Ingredients and Tools

Ingredients

For the cheese crust

  • 200g of flour
  • 1 pinch of salt
  • 150g of diced butter
  • 50g of grated cheddar or red leicester
  • 3 Tbsp of water
  • 2Tbsp of milk

For the filling

  • 2 spring onions
  • chives (optionnal)
  • 140g of Cheshire
  • 20cL of sour cream
  • salt and pepper
  • 500g of thinly slided potatoes (a mandolin slicer is a great help)

Tools

  • Knife or mandolin slicer
  • Bowls
  • Fork
  • Rolling pin
  • Cutting board
  • Pie dish (22 cm)

Step 2: Make the Cheese Crust

In a large bowl, mix :

  • Flour
  • Salt
  • Diced butter

Combine together until it looks like crumbs

Add the grated cheddar.

Once everything is combine, add water Tbsp per Tbsp until the you get some dough.

Make a ball and store in the fridge.

Step 3: Make the Filling

It's about time to set your oven on 180°C.

Chop the onions.

Grate the cheese or squash with a work if it's soft enough.

Combine with cream.

Step 4: Make a Pie

Sprinkle flour on the table.

Divide the dough, 1/3 for the lid and 2/3 for the pie.

Roll the big ball to make the bottom and put it in a greased pie dish.

Add a layer of potatoes, followed by a layer of cheese mix... The last layer must be potatoes. Mine is 3 layers of potatoes and 2 layers of cheese.

Roll down the lid and place on top of the pie. Press your filling, making sure you don't break the lid.

Cut off the excess then press firmly the edges, trying to be neat.

Make your design on the lid, making sure you don't cut through the lid.

Brush a little milk on top.

DON'T MAKE A VENT (You can't say I haven't warned you!)

Step 5: Baking Time

Place the pie in your warm oven for 30 minutes.

Turn down the temperature to 160°C and bake for another 40 minutes.

If your pie is getting too brown, place a sheet of tin foil over it

Step 6: Enjoy

This pie is best served warm with salad.
