Introduction: Pythagoras's Pi Sweet Pie

This pie is downright sinful! It is a Greek inspired pie with layers of  sweet goodness!  Starting with a layer of coconut, cinnamon, nutmeg, sticky dates and walnuts!  Next is a yummy layer of vanilla custard ...and finally, a flaky layer of phyllo dough! Think baklava meets vanilla custard! A Big Fat Greek Wedding of Deliciousness!

Step 1: Gather Your Ingredients!

Ingredients:
1 pie crust (store bought or homemade)
2 cups milk
1/2 cup sugar (divided, 1/4 cup, and 1/4 cup reserved)
3 egg yolks
1 whole egg
1/4 semolina flour (you can substitute cornstarch)
1 tablespoon butter (unsalted)
1 1/2  teaspoon vanilla
1/2 cup dates (chopped)
1/2 cup walnuts (chopped)
1/2 cup coconut (shredded)
1/2 tablespoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon brown sugar
10 sheets phyllo dough (thawed)
4-6 tablespoons butter (melted)

Step 2: Build a Good Pi Foundation!

Preheat oven to 350 degrees.
Gently roll out pie dough and place into a pie dish.  Sprinkle with cinnamon and set aside.

Step 3: Its a Milk Bath!

In a heavy saucepan, stir together the milk and 1/4 cup of the sugar.  Bring to a boil over medium heat.

Step 4: Egghead?! Custard in the Making....

While the milk is heating.....
In a medium sized bowl, whisk together the egg yolks with the whole egg. 
In a small bowl, combine the semolina flour with the reserved 1/4 cup sugar.

Step 5: Come Together....right Now....over Me....

Stir the semolina mixture into the eggs and whisk until smooth.

Step 6: Dont Scramble the Eggs!!!!

When the milk comes to a boil, remove it from the heat.  Slowly drizzle the milk mixture into the egg mixture.  Whisking the entire time, until all of the milk mixture has been combined into the egg. 
Return the combined mixture to the heat and bring back to a boil, whisking constantly to avoid lumps.

Step 7: Baby, Your Thick!

When the mixture comes to a boil and thickens, remove from the heat and pour into a medium sized bowl.  Stir in the vanilla and butter and mix until fully combined.

Step 8: Time to Chill....

Place a piece of plastic wrap over the custard and place in the refrigerator for about 20 minutes to chill.

Step 9: Sweet, Sticky....My Oh Pi!

While the custard is chilling...
in a medium sized bowl, mix together the dates, walnuts, coconut, cinnamon and nutmeg.

Step 10: Let Us Make a Pi Pie!

Pour the date/nut mixture into the prepared pie plate. 

Step 11: Pour Some Custard on Me!

Spoon the cooled custard onto the top of the date/nut mixture.  Smooth out the custard to make an even layer , and sprinkle with cinnamon.

Step 12: Layers and Layers of Flaky Deliciousness!

Place a layer of phyllo dough on top of the custard, and brush with melted butter.  Place another layer of phyllo dough and then some more butter.  Continue until you have 10 layers of phyllo.  Brush the top layer with butter.  Bring the pie dough up along the edges and pinch over top of the phyllo dough, creating a crust.

Step 13: Im Baked!

Place your Pi Pie into the oven and bake for 30-35 minutes or until the top is golden in color.  Remove from the oven and let cool before serving. Garnish with a Pi made from dates!
