Introduction: QUINOA WITH SAUTE VEGETABLES IN a REDUCED BALSAMIC VODKA SAUCE
THIS A VERY QUICK AND DELICOUSLY HEALTHY MEAL..... IT CAN BE PREPARED IN LESS THAN A HALF HOUR....
Step 1: INGREDIENTS
1 cup quinoa
2 cups water
1 onion
1 large tomato
1 red pepper
1/2 cup cranberries
2 carrots
1 cup of frozen corn
1/4 cup pine nuts
2-3 sun dried tomatoes sliced and diced
2 tablespoons of balsamic vinegar
2 tablespoons of vodka
2 cups water

Step 2: PREPARING THE QUINOA
In a medium saucepan, bring to a boil, the water with a little salt, pepper and olive oil. When the water reaches a full boil, add the quinoa, and reduce heat to a simmer, cover and let cook for 15-20 minutes.
Step 3: PREPARING THE VEGETABLES
In a medium sized skillet, add enough olive oil to cover the bottom, add onion and let brown then the rest of the vegetables and sauté for about 15-20 minutes before adding in the balsamic and vodka.
