Introduction: Quick & Tasty: Apple and Peanut Butter Eggos
I've been making this simple and delicious breakfast for years as a weekend treat.
I recommend using crunchy honey peanut butter (if you can find it) for a little extra sweetness. If you just have plain peanut butter on hand, you can drizzle the top with honey or maple syrup. This breakfast keeps me full for hours, one piece or two, it's up to you! I've tried a few types of toaster waffles but the whole grain Nutrigrain Eggos are by far my favorite. Toast them till they're crispy so that they hold up well under the peanut butter and apples.
It's also tasty with berries instead of apples.

Step 1: Gather the Ingredients
Ingredients for two apple waffles:
- 2 toaster waffles: Nutrigrain Whole Grain Eggos work best, I've found.
- 1/2 a medium to large apple
- honey peanut butter, crunchy is best
- cinnamon

Step 2: Toast & Slice
While the waffles are toasting, halve the apple and set aside one half. Slice the remaining half very thinly.
Step 3: Spread the Peanut Butter
Spread peanut butter on toasted waffles.
Step 4: Layer the Apples
Layer the apples as shown.
Step 5: Top It Off!
Sprinkle cinnamon on top. Optional toppings include pumpkin pie spice or a bit of granola. Now it's time to enjoy with a big cup of coffee :)
