Introduction: Roasted Chicken Dinner

I have several gadgets that I can use to make one pot meals! For my roasted chicken I had a choice of using my Ninja Foodi Pressure Cooker or my slow cooker, but I decided to use my Nuwave Oven that I have had for many years. When I use it, the chicken always comes out moist and juicy and the vegetables roast nicely.

Step 1: Gather Supplies and Ingredients

Supplies:
scissors

sharp knife

fork

large plate

Nuwave Oven

pot holders

Ingredients:

no stick cooking spray

whole raw chicken

1 (15-ounce) can whole potatoes

8 ounces fresh baby carrots

barbecue seasoning or your seasoning of choice

Step 2: The Potatoes and Baby Carrots

Open canned potatoes and drain off the liquid.

Cut the potatoes so they are all about the same size. Arrange the potatoes around the outside of the Nuwave Oven pan so that they brown well. Place the baby carrots in a single layer in the center.

Cover the vegetables with the rack. Spray the rack and vegetables with no stick cooking spray.

Step 3: Prep the Chicken

Cut the plastic wrapping off of the chicken. Run the chicken under cool water and pat dry. Place on a plate or work surface. Using a very sharp knife, cut the top of the chicken in half, cutting next to the breast bone. Turn the chicken over. Cut along both sides of the back bone. Discard the backbone or save for another use. You now have 2 chicken halves.

Step 4: Ready to Cook

Place the chicken halves, side by side, skin side down on the Nuwave Oven rack.

Spray the chicken with no stick cooking spray. Sprinkle generously with barbecue seasoning.

Assemble the Nuwave Oven.

Step 5: Set the Temperature and Time

Set the temperature to 350 degrees F for 23 to 30 minutes depending on the size of the chicken.

This was a fairly large chicken so I set the timer for 27 minutes.

Step 6: Turn the Chicken Over

When timing is completed, carefully open the hot oven and turn the chicken over. Spray with no stick cooking spray and sprinkle generously with barbecue seasoning.

Step 7: Complete the Cooking

Assemble the oven and set to roast at 350 degrees F. for 27 minutes longer. Remove the Nuwave cover.

Presto! The chicken, potatoes and carrots are nicely roasted!

Step 8: Serve and Enjoy!!!

Cut chicken into serving pieces. Place onto serving plates.

Remove the rack. Serve the potatoes and carrots with the chicken. Spoon on some of the chicken drippings from the pan. I love making this one pot meal on a night that I have many things to do. It practically makes itself!
