Introduction: Salmon Filet With Dill Sauce and Mushroom Dumplings
As most students my age, who have no time and sometimes also no knowledge regarding cooking, I was completely dependent on any kind of fast food chain in my city. However, after some time I decided to be more aware about the food I eat and I learned a lot about healthy food and cooking. Now cooking has become really enjoyable for me and so I would like to share one of my favorite dishes with you.
Step 1: Ingredients
First of all, the necessary ingredients must be gathered. Here I’ve listed everything you’ll need for 4 proper portions.
For the filling of the bread dumplings you’ll need
- 200 g mushrooms
- some cheese (gouda or cheddar or any similar kind)
- 1 big tomato
- 1 clove of garlic
- parsley
- salt, pepper and cilantro
For the dough of the bread dumplings you’ll need
- 250 g wheat flour
- 1/8 l water
- 1 teaspoon sugar
- 1 teaspoon dry yeast
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 tablespoon oil (corn or sunflower oil)
- 70 g yogurt
For the dill sauce you’ll need
- 25 g butter
- 20 g wheat flour
- 3/8 l milk
- 2 tablespoons crème fraîche
- dill
Last but not least you’ll need
- 4 salmon filets
- olive oil
- 1 broccoli tree
Step 2: Filling I
Start with the filling. The first step is to cut the mushrooms into thin slices and put it in a pan on the stove at a low degree. Since mushrooms are full of water, it needs some time to boil them dry.
Step 3: Filling II
Next, blend the tomato with the garlic and add it to the mushrooms. As soon as everything is dried up add a little olive oil and some spices (salt, pepper and cilantro, but you can also add different spices to your own taste). Mix everything together.
Step 4: Filling III
The filling is now almost finished. Put it in a bowl and add some parsley.
Step 5: Dough I
For the dough mix sugar, water and yeast together and let it raise.
Step 6: Dough II
Mix the rest of the ingredients (wheat flour, salt, baking powder, oil and yogurt) and add the sugar-water-yeast mixture. Knead everything together until you get a dough.
Tip: If the dough gets sticky, add some flour.
Step 7: Mushroom Dumplings I
Now roll the dough and cut out circular pieces (approx. 7 cm diameter). I used my coffee can because it has the perfect size :)
Step 8: Mushroom Dumplings II
Place a small amount of the filling on one side of each piece and top it with some cheese. Then fold the dough. Use a fork to close the edges.
Step 9: Mushroom Dumplings III
Before putting it in the oven brush some egg on top of the dumplings to make them look even more delicious. Now bake them at 200°C until they get a golden brown color.
Step 10: Dill Sauce I
Put butter and wheat flour on the stove at a low degree and stir it. Add some milk and stir it until there are no lumps. Then add the rest of the milk and some spices (to your own taste). Now let it boil down until it becomes thicker.
Step 11: Dill Sauce II
When it’s thick enough add crème fraîche and dill and take it from the stove.
Step 12: Salmon Filet
This part is very easy. Actually if you buy the right fish nothing can go wrong here :)
Fish especially salmon comes very often from aquacultures and differs therefore in quality and taste from wild salmon.
Put some olive oil and again some spices to your own taste in a pan on the stove at a middle degree. When it’s hot enough put the filet in the pan and roast it slowly on each side.
Step 13: Broccoli
Regarding the broccoli, cook it in salted water al dente. Actually, I chose broccoli because I like it very much and it's fresh at this time of the year. You could also add carrots, zucchinis or eggplants.
Step 14: Serve and Enjoy :)
We all know that we eat with our eyes first. Therefore, arranging the food on the plate is very important.
