Introduction: Savoury Kordoi (a Snack Recipe From North Eastern India)
Kordoi recipe is a popular snack from North-East Cuisine belongs to Assam located in India. Savoury Kordoi is a dish made with very basic ingredients and so you don't need any special preparation. This recipe generally made during Bihu (their local festival)
Supplies
½ Cup, whole wheat flour
1-1/2 tbsp, finely chopped onion
2 tbsp, finely chopped coriander leaves
2 tbsp, grated carrot
1/3 tsp, cumin seeds
1/3 tsp, carom seeds
2 tsp, ghee for making dough
Oil, to deep fry
Salt, to taste
Step 1: Take Wheat Flour and Add Chopped Veggies and Spices Together
Take a bowl, add whole wheat flour, chopped onion, coriander leaves, grated carrot, cumin seeds, carom seeds, ghee and salt.
Step 2: Rub All the Ingredients Together.
Rub all the ingredients together.
Step 3: Make a Stiff Dough
Sprinkle water little by little and make a stiff dough and let it rest for 10 to 15 minutes.
Step 4: Shape the Dough Into Small Equal Balls
Divide the dough into equal balls of big gooseberry size. shape into balls and flatten them.
Step 5: Roll the Ball
Roll the ball into a thin disc around 3 inches on a floured surface.
Step 6: Make Straight Lines
With a sharp knife, cut straight lines, making sure not to cut all the way through.
Step 7:
From one end start to make a roll, pinching the ends to bind. Push the two ends of the shaped kordoi gently to plump the middle.
Step 8: Deep Fry Kordoi
Deep fry kordois in batches until golden brown and crisp.
Step 9:
Drain Kordois on an absorbent paper.
Step 10: Ready to Serve
Serve hot with ketchup or chutney.

These looked very intriguing. I am a low carber but I totally think these would work with the right fathead dough. nice!
