Introduction: Schichttorte

This complex cake takes a while to make, but it is very yummy!

Step 1: Ingredients

10 egg whites
10 egg yolks
80g unsalted butter, softened
140g caster sugar
zest of 1 lemon
155g plain flour
60g cornflour
For the topping:
2 tbsp. sunflower oil
90g milk chocolate, melted
For the vanilla icing:
150g icing sugar
4 tsp. milk
1 packet vanilla sugar

Step 2: 1.

Whisk the egg yolks for 4 minutes with an electric mixer. Beat the butter and sugar together separately and add the lemon zest. Add the egg yolks to the butter mix and fold in the flour and cornflour.

Step 3: 2.

In a clean bowl, whisk the egg whites until stiff. Add half to the other mix to loosen consistency. Gently, fold in the other half. Preheat the grill to high and grease the tin. line the base with baking paper. spread about one tablespoon of mixture across the base and cook for about five minutes until light golden brown. spoon another tablespoon of mixture into the tin and spread about. bake until dark golden brown. keep on alternating until there is no mix left.

Step 4: 3.

For the chocolate topping, mix together the oil and chocolate until no more oil is swimming around on top. Spread over cake. Mix together the milk, icing sugar and vanilla sugar and drizzle in a crisscross pattern on top of the chocolate. Enjoy!
