Introduction: Simple, Tasty Vegan Pancakes
Does what it says on the tin: simple, tasty vegan pancakes. These pancakes have very few ingredients, are easy to make, and as tasty as a very tasty thing. Even your animal eating friends will enjoy them.
These are Dutch style pancakes, which are thinner and larger than American pancakes; they are generally not seen as a breakfast food, but hey, whatever spins your beanie.
Step 1: Ingredients
You will need:
- 1 kilogram of flour
- 1,5 liters of Apfelschorle or 1 liter of apple juice + 1/2 liter of sparkling water
- 1 pack of baking powder (15 grams)
- small teaspoon of salt
- your favourite frying oil
Tools:
- mixer
- one or more frying pans
- spatula
To elaborate: what I'm calling baking powder is usually a mixture of monocalcium phosphate, sodium bicarbonate and cornstarch.
Step 2: Mix It Up
Combine flour, baking powder and salt in a big bowl.
Add the apfelschorle or the other liquids gradually while mixing.
Keep mixing until you have a smooth, runny batter.
Step 3: Heat It Up
Heat up your frying pans and put a few drops of oil in each.
Put a scoop of batter in one of them, and tilt the pan slightly to cover the whole surface of the pan.
Allow the batter to set, and the pancake to turn a nice, golden brown before you flip it.
Step 4: Stack It Up
Bake your pancakes nice and brown on both sides, and stack them on a plate.
Step 5: Gobble It Up
Have your piping hot pancakes with any of the following:
- banana
- honey
- syrup
- bacon (if you're one of those people)
- chocolate spread
- jam
- jelly
... and whatever else seems good to you.
Enjoy! Eet smakelijk!

No worries, it's not contagious. I've had these many times and I'm still not a vegan.

Not sure why we need vegan pancakes. I love meat but my pancakes are flour, yeast and water. Sometimes blueberries, strawberries or crushed pecans but usually nothing else. Sausage, bacon or ham on the side next to eggs with cheese and tomatoes.. or even chicken fried steak... YUM. Maybe I should try a meat pancake. Thanks for the idea!

Well, sounds to me like you've been having vegan pancakes all along!
Here in the Netherlands, pancakes are generally made with eggs and milk. For vegans, or folks who are lactose-intolerant, it's nice to have a different option. I'm not vegan, by the way. But I know people who are, and I like being able to bake some nice pancakes that we can share.
Bacon pancakes are popular here, for a good reason: many people think they're delicious. So yes, sounds like something you should definitely try. Enjoy!

Ron Swanson would most likely not notice anything unusual about these pancakes except for a faint aroma of apples. They're that good.
