Introduction: Sous Vide Duck Breast Recipe

Welcome to this amazing cooking instructable. Here I'm going to show you how I made my amazing textured duck breast. First I want to thank the "foodwishes" youtube channel which inspired me to make this duck. Also I want to say I'm from Holland, so my English grammar should not be as good as it have to be. So sorry for that.  Here's a picture of the final product.

Step 1: Okay, Lets Start!

Well, let's start!
This instructable show you how to make duck for 2 people.

The ingredients we need for this recipe are:
- 2 duck breasts
- some fresh thyme leaves
- salt and pepper
- lentils
- french beans
- lettuce with croutons and some sort of dressing
- potatoes
- meat sauce to put on the duck

We also need some basic, but also some more expensive kitchenware, like a really sharp knife, a cooking thermometer and Ziploc (yes, use this brand, and not some dollar store specials) bags.

By the way this was my first try, so I don't buy everything fresh, like the lentils and the beans.

Step 2: First Step

First take your duck and your knife and make slashes in the fat layer of the duck, do not go through the fat and cut in the meat itself!
Season both sides and put some fresh thyme leaves on it.

Step 3: Cooking the Duck

Take your duck breasts and put them in a Ziploc bag. seal the bag verry well and suck out the air with a straw. No idea if sucking raw duck air is dangerous, but otherwise it's going to float in the pan.
Take your duck and put it in the refridgerator for one hour.
While it's in the fridge, take a big pan and fill it with boiling water, and then take the temperature down to 60 degrees celcius (135 Fahrenheit).
When the hour in the fridge is over, take the duck and put it in the pan while it's still in the Ziploc bag. Let it cook for 1 hour.
While you're cooking it, take your lentils, lettuce and your potatoes and prepare them.
I also take something heavy and put it in on the Ziploc so it doesn't float.

Step 4: After Cooking

After the refridgerator and the cooking process, take out the duck. Now it looks really weird and grey tinted. No worries, this is good!!!
Put some oil in a pan and bake it for 5 minutes on the fat side, and then turn it over and bake it for 2 minutes on the meat side. You might flatten it out so every piece of meat is totally baked.

Step 5: Slice and Enjoy!

Now slice the duck in nice pieces, and serve it with the potatoes, the lentils and the lettuce. I serve mine with a cranberry meat sauce.
I hope you enjoy it. Thanks for reading this instructable.

I specially want to thank the youtube channel called "foodwishes" for the inspiration of making this duck.

Please leave a comment and enjoy your duck!
