Introduction: Speculoos Tiramisu (alcohol-free)

This Instructable will show you how to make a Speculoos Tiramisu! :)

Speculoos are cinnamon and ginger flavored biscuits (very popular in Belgium).

This Tiramisu recipe variation doesn’t contain ladyfingers, cocoa powder, Marsala wine and amaretto like the classic. It’s perfect if you love cinnamon cookies and caramel.

Step 1: Making the Mascarpone Cream

You will need :
-3 eggs

-250g mascarpone

-90g granulated sugar(1/2 cup)

-300g Speculoos*

-1 cup of freshly brewed coffee or espresso

-Almond extract* (optional)

-Vanilla sugar (4 teaspoons, 26g)

-Salted caramel pearls and roasted almonds (optional)

-Whipped cream (optional)

First, you will need to place the egg yolks in a large bowl and the whites in another.

Beat the egg yolks with 90g granulated white sugar and 2 teaspoons of vanilla sugar until the mixture turns pale yellow and looks noticeably is thicker. Then, you can add 250 g mascarpone and 1 drop of almond extract and beat at medium speed until evenly mixed.

Use an electric mixer to beat the egg whites in another bowl until stiff peaks form. Next, carefully incorporate the beaten egg whites into the mascarpone and sugar mixture with a large wooden spoon.

* I replaced the Italian ladyfingers with Belgian speculoos (ginger cookies) and I used almond extract instead of amaretto.

Step 2: Layers of Speculoos

You can add 2 teaspoons of vanilla sugar to your cup of coffee. Then, lightly dip a few biscuits (Speculoos) in the coffee and arrange them to form a layer at the bottom of your dish.

Evenly spread 1/3 the mascarpone cream on this first layer of Speculoos.

Then, dunk more biscuits and make a second layer of biscuit and mascarpone cream above the first layer.

You can form a third layer of biscuits and add the mascarpone cream on top.

Next, roughly break up a few Speculoos and use a food processor to crush them into medium crumbs.

Sprinkle the Speculoos crumbs on the last layer of mascarpone cream and evenly spread with the back of a spoon.

Step 3: Finishing Touches

Let it sit overnight in the fridge (I promise this tiramisu really taste better the next day!).

Just before serving, you can decorate it with roasted almonds dipped in caramel butter, whipped cream, biscuits and delicious salted caramel pearls.
