Introduction: Stacked Guacamole Sandwich

About: I grew up on a Centennial farm in the State of Oklahoma which raised chickens, pigs & cattle. Every day was full of life and there was never a dull moment. I love to be in the kitchen creatively baking and…

This recipe took me back to my childhood when I used to take sandwiches to the field to feed the workers. I would make sandwiches of every kind and bag. However, this year is going to be different, 3 decades later, I am going to bring stacked sandwiches. What a clever idea that I had never thought of as the days are long during harvest and the combines never stop running until the crop is brought in.

A sandwich is usually small, but when stacked is tall. The ‘Stacked Guacamole Sandwich’ is my twist on chicken salad. The pop from the pomegranate and the protein from any type of chicken makes this an inviting inventive sandwich.
