Introduction: Stuffed Peppers

Stuffed Peppers

serves : 6

Ingredients :

Peppers of different colors : 6

Vegan sour cream : ¼ cup

Black salt : ¾ tsp

Dry bread crumbs : ¼ cup

Dried oregano : ¾ tsp

Dried Thyme : ½ tsp

Vegan ground meat : 500 g

Chopped fresh coriander/ Parsley : ¼ cup

Direction :

1. Preheat oven to 375 F.

2. Whisk sour cream and salt in a bowl. Stir in bread crumbs, oregano and thyme. Mix in mock meat and coriander until evenly mixed.

3. Slice of tops of peppers and set aside. Cut out and discard cores. Fill peppers with above mixture.

4. Arrange in a baking dish and place tops back on peppers.

5. Cover with foil. Bake in centre of oven for 30 minutes. Uncover and continue baking for more 20-30 minutes.
