Introduction: Super Seafood Soup

Super Seafood Soup
4 - Med. Potatoes,chopped
2 - Med. Onions, diced
2- Med. Carrots, finely sliced
1 - 28oz can diced Tomatoes
1 bag frozen Seafood medley, defrosted
4-6 cups broth or water
1 Tbs. olive oil
1/4 cup soy sauce
1 Bay leaf
1/2 tsp. celery seeds
1/2 tsp. cayanne pepper
1/2 tsp. dried thyme

Step 1:

Wash and peel potatoes.
Keep covered with water, until ready to chop and add to the soup.

Step 2:

Chop onion.

Step 3:

Chop carrots.

Step 4:

Brown onions with 1 Tbs. olive oil in a large stock pot.

Step 5:

Add diced tomatoes and 4-6 cups of broth or water to browned onions in stockpot.
Add potatoes and carrots.
Bring to a boil and then lower heat to simmer.

Step 6:

Add soy sauce and spices to soup.

Step 7:

Add seafood to soup and simmer, covered, for 10-15 mins.

Step 8:

Serve soup. Garnish with fresh thyme sprigs.
