Introduction: Surefire Recipe for Chinese Hoisin Beef Stir-Fry

Step 1: Asian Cuisine, I Love It...

As a lover of "Asian Cuisine" I wanted to find out the How-To of doing it myself at home. SO, I was buying myself a WOK pan and trying out since months different meals... Well some where acceptable, BUT I NEVER got the Beef tender as expected, even with quality meat and ALSO THAT special taste as in the restaurants!!!

SO, by "LEARNINing-By-Doing" and following different "Tutorials" on "YouTube" I managed to GET it right!

There is a little secret behind.., Follow the next steps, please...

Step 2: The Ingredients

Rump Steak

5 Spring Onions

3 Clove Garlic

5g Ginger

½ Red Pepper

½ Tsp Rice Wine

½ Tsp Light Soy Sauce

½ Tbsp Dark Soy Sauce

1 Tbsp Oyster Sauce

2 Tbsp Hoisin Sauce

2 Tbsp Brown Sugar

1 Tsp Sesame Oil

½ Tsp Coarse Black Pepper

1 Tsp Cornflour

1 Tbsp Sodium bicarbonate

3 Tbsp Beef or Chicken Stock

Step 3: Tender Beef, Easy to Realize With SECRET Ingredient!

You can use "Beef Fillet" or as I did "Rump Steak". Cut the meat in fine thin stripes and put it in a bowl.Add the following ingredients:

½ Tsp Rice Wine

1 Tsp Cornflour

½ Tsp Light Soy Sauce

2 Tbsp Brown Sugar

And HERE the SECRET ingredient:

Add 1 Tbsp Sodium bicarbonate as it makes the meat very tender.

Mix everything with the hands and put the bowl with the meat marinade into the fridge for +/- 1/2 hour - 1 hour.

IMPORTANT: Do NOT put salt on the meat!! Because of the sauce with Soy the meat will get enough salty taste ;)

Step 4: Preparation of the Vegetables

Meanwhile as the beef is into the fridge you can already prepare the vegetables. In my case I was choosing:

Bamboo shoots

1/2 green pepper

1 onion

5 spring onions

Chop the green (or red) pepper into fine slices.

Chop the onion into fine slices.

Chop the spring onions into +/- 1 inch slices and separate the white parts. The green parts will ONLY get used at the end of the cooking.

Take the WOK-pan, put some Sesame oil in it and cook the vegetables one apart the other for +/- 2 minutes and live them in a bowl separately.

Do the same with the Ginger and the garlic.

Step 5: Preparation of the Meat

Put some Sesame oil in the WOK-pan and fry the beef for +/- 2 minutes (see photo, please) and put it aside..

Step 6: Preparation of the Sauce

Place the oyster sauce (I used Fish sauce, works also fine...) and Hoisin sauce in a bowl.

Add dark soy sauce and brown sugar.

Add Sesame oil and black pepper.

Add Beef Stock.

Mix well.

Step 7: Preparation Is Done, Let Us Cook the Whole Now...

Take the WOK-pan and put some Sesame oil in it. Wait till the oil is HOT and add the beef with the garlic, white parts of the spring onions and ginger.

Stir-Fry for +/- 2 minutes.

Add the other vegetables and stir-fry for +/- 30 seconds.

Add the sauce mixture.

Stir-Fry for a minute.

Add the green parts of the spring onion and stir-fry for 10 seconds.

Remove from the WOK-pan and serve with rice or Pilau-Rice.
