Introduction: Sweet Potato Delight! With Strawberries
Sweet Potatoes, Strawberries, Orange Juice Concentrate. Three disparate ingredients combined in one surprisingly good, easy to make package.
Step 1: Ingredients
The dish I made serves about 5 or 6
8 Medium Sweet Potatoes
1/3 to 1/4 a Can of Orange Juice Concentrate
Half a Pint of Strawberries
You will also need:
1) Tin foil
2) A glass cooking tray
3) Two mixing bowls
4) A cutting board
5) A mashing implement
6) A cutting implement (for fruit)

Step 2: Prepare the Potatoes
We are making mashed sweet potatoes.
First wash the sweet potatoes.
There are then two ways to cook them. The way I didn't use was to put them in boiling water and wait until the skin shears off easily by hand. If you use this method take care to pick sweet potatoes of approximately the same size so that they will cook quicker.
The way I used today was to roast them. I took each sweet potato and stabbed it lightly with a fork twice. This allows the juices to flow out. I took a glass cooking pan and layed tinfoil on its surface. I placed the potatos on the surface of the tinfoil and then put it in the oven at 425 degrees.
Now wait for a little while.

Cut up the strawberries.
Make the pieces small enough that they will fit easily on a tablespoon.
If strawberries are out of season, use whatever fruit you have on hand. Also frozen strawberries work well. The syrup sauce in those containers tends to cause the finished product to be sweeter and more fluid.

Step 4: Mash and Mix
After 30-60 minutes your sweet potatoes should be ready. Test this by poking them with a fork. If they are soft and give easily to your prodding then they are ready.
Take them out of the oven.
Prepare a bowl of cold water and place nearby a container you are going to mash them in.
One by one remove the potatoes from the pan and put them in the cold water bowl. Skin them in this bowl and put the pulp in the mashing container.
Alternatively, Canida suggested to me that you cut the potatoes in half and scoop out the pulp.
Mash the potatoes until they are of reasonable consistency.
Now, melt a bit of orange juice concentrate in the microwave and pour it into the mashing bowl. I used about a 1/4 of a container. Mix it in thoroughly.
The MOST IMPORTANT aspect is that the consistency of the mashed potatoes should change so that it is far less viscous, somewhat like applesauce.
Take them out of the oven.
Prepare a bowl of cold water and place nearby a container you are going to mash them in.
One by one remove the potatoes from the pan and put them in the cold water bowl. Skin them in this bowl and put the pulp in the mashing container.

Take the cut strawberries from step 3 and mix them in thoroughly. It is good if the strawberries bleed a little of their juice into the item.
Voila!
Eat with a spoon. It can be kept overnight for a couple of days and eaten as breakfast as well.

3) Frozen strawberries
